Question: I need to bring a potluck dish that doesn't need to be refrigerated...any ideas?
I have a potluck tomorrow, and I need to bring a main dish of sorts (not desserts and not dips, preferably something vegetarian) any ideas will help! Oh yah, there isn't really going to be a fridge so i can not refrigerate anything. Thanks!

Okay, how about the famous Spaghetti Salad? In fact, if you can boil the noodles tonight, I would do that and then pop them in the freezer and then take them to where ever it is that this potluck is and give them enough time to defrost so they are still cool by the time you assemble the salad at your potluck and then you won't need a fridge. I would bring the other ingredients and peel the cucumber and onion there (or leave that out) and then cherry tomatoes doesn't need to be refrigerated and neither does a brand new bottle of Italian dressing and that McCormicks "Salad Supreme". So, freeze the noodles tonight, bring the veggies uncut up and assemble the salad at potluck with tossing in dressing, veggies and seasonings and you'll have a vegetarian dish.

Ingredients:
16 ounces Vermicelli or spaghetti (boiled according to package and drained)
16 ounces bottle Italian dressing
1 large red onion, chopped
2 tomatoes, diced
1 large cucumber, diced
2 3/4 ounces jar "McCormicks" brand "Salad Supreme"

Spaghetti Salad serves/makes 8

1. if you make it right before you go to the potluck i dont see why making any vegiterian dish isn't worth not making.

2. buy one of those hot cold bags to put food in and keep the food cold/hot for hours if needed too that way you can make whatever you want next time.

and to the first guy i do believe hummus is a dip. and needs to be refrigerated at some point.

if your okay i would try and do something like deep fried vegitables pid them in a batter like maybe shrimp tempura style or fish n chips style deep fry em cover it up in foil and try to get to the party pretty quick. u can use like dips too or dressing for this. it's pretty good especially zuccinni and cucumbers and tamatoes. but it gets soggy after a while.

theirs also vegitable pizza. my college makes a really good one. they put parsley, spinich , marinara sauce , cheese, tomatoe slices and thats it then they put it on a grill and grill it not bake. also their crusts are pretty thin so you can hold it up with 1 hand it wont fall over or anything it's pretty hard but not too hard like rock hard.

Mini grilled cheese sandwiches

pumpkin kibbeh:

* 2 cups mashed pumpkin or squash
* 1 cups fine bulgar (soak in boiling water, drain before adding 2 tsp salt)
* 1/2 teaspoon pepper
* 1 teaspoon coriander
* 1 teaspoon allspice
* 3/4 teaspoon cumin
* 1/4 teaspoon cayenne
* 1 medium onion chopped
* 4 cloves garlic
* 1/2 cup flour
* Olive oil (for greasing)

Preheat the oven to 375 degrees. Place the pumpkin, buglar, salt, pepper, coriander, allspice, cumin, cayenne, onion, garlic, and flour in a food processer until thoroughly blended. (Alternatively, in a large bowl mix all these ingredients by hand.) Taste for seasoning and add more salt or spices as required. If the mixture seems to moist, add a little bit more flour and mix it in.

Grease an 8-inch square pan with olive oil. Pour the mixture into it, smooth the surface and pour a tablespoon of olive oil over the top. Bake for 20 to 25 minutes or until the surface looks dry. (The inside will be moist.) Alternatively you can form the mixture into 2-inch patties and fry them in olive oil.

1 large sweet potato
1 can black beans, drained and rinsed
1 bunch swiss chard
2-3 cloves garlic
1 red bell pepper, chopped
handful of raisins
handful of pinenuts
juice of one lime
olive oil
chili powder
s&p

Peel the sweet potato, chop into bite-sized pieces and boil for 5-7 minutes until tender. Drain. In a skillet, saute garlic in olive oil, then add pinenuts, chopped swiss chard (leaves and some of the stem) and red pepper. Then add the black beans, raisins, lime juice, chili powder, s&p. Stir in the sweet potato chunks and enjoy!
