Ok, this is actually VERY good.

4 pieces of boneless chicken breast
1 can of sliced olives
1 package of fresh sliced mushrooms
1 large or 2 small jars of marinated artichoke hearts
1 lemon

I cut the chicken up a little larger than bite size and bread them with italian bread crumbs. Brown them a little in olive oil on stove, but just to brown because you will be baking them too. When they are browned, pull off stove and add the drained olives, the raw mushrooms, the juice of 1 lemon and the artichoke hearts INCLUDING the marinade in the jar. It will not look like much liquid but trust me, it is. Put in a casserole and bake for 25-30 minutes at 350 degrees. I serve it with rice pilaf. It is SO good. Even people who are hesitant have loved it.

And serve this for dessert:

It's really not complicated and it is the best cheesecake I have ever had.

: )
