In fine dining service the proper way to service food and drinks is from what side of the person sitting down? And what side do you clear plates?

Serve from the left, clear from the right.
Based on the fact that most people are right-handed.
It's proper to serve from the LEFT side of someone, and to take away from the RIGHT side. This is considered "Old World", and is still used in fine dining everywhere.
