How to make chilled apple cider?!

My husband and I are hosting a little autumn themed family get together. We live in Arizona, and really don't have an autumn here. It's still in the high 80s in October, and all we have are evergreens and cacti (no fall foliage). Anyways, were trying to make our little party (about 20 people) a little more autumn-y. We have some autumn decorations were setting up, so we will at least have some faux foliage. Were serving autumn inspired finger foods, and want a drink to match.

Nothing says autumn more to me than apple cider. Since it will be 80+ degrees out, we don't want a hot beverage. So what is the recipe for apple cider, and how should we serve it chilled (for example in a pitcher with ice, or just straight out of the fridge?)?
