Does this sound like a good menu for my man's birthday?!
beef wellington with a port and shallot reduction..with fresh green beans cooked in butter and garlic
dessert would be tarte tatin or a chestnut teramisu or creme brulee

I think, instead of a hollandaise, maybe you should do a zabaglione.
Whisk 4 egg yolks, 1/4 cup sugar, and a 1/4 marsala wine in a double boiler over simmering water. Beat until it turns into a thick, not quite pudding like consistency. Serve that over asparagus, and you will not regret it.
Creme brulee is a definite dessert. Maybe serve it with raspberries.
It's totally okay is your guy loves a hearty meal, but a lot of it seems like it would just sit in the stomach.
Sounds good to me, but I don't think my husband would like beef wellington. Hopefully yours has a more diverse pallet.
