I guess it depends if you're going for classy and graceful or just goofy and fun. Wine and cheese tasting party is pretty cliche but you can't really go wrong. Fall theme (maybe Oktoberfest) would be nice too with cooler weather recipes/ drinks. Fun ones I've tried out: sports (yay football!), casino or hollywood/ celebrity.
I've done party planning a lot and the popular adult parties are:
1) Cocktail hour theme- martinis and "snack/finger food". I did a "rat-pack cocktail party" once and it was fun.

2) Wine and cheese party- Have each guest bring a different bottle of wine (or supply wine if you don't want to ask ppl to bring anything) and have some different cheeses or fondue

3) Beer tasting party or if it's in October, Oktoberfest- with different types of beer (it doesn't have to be expensive) and a crockpot full of mini sausages or kelbasa

We like having beer tasting party's. Everyone bring a couple different beer's, enough so everyone can have a sample. We get our taste, discuss the flavors and by the end of the night...they are all delicious!
