Justine, are you the only one that is vegetarian?
It depends on your personal food preferences. If it were me, I'd go with Italian because pasta dishes are SO easy to keep vegetarian and I LOVE Italian food! Nice big Italian salad, good bread with butter or olive oil and herbs to dip it in... or a bruschetta or flatbread veggie pizza, then pasta with marinara - you can do cheese ravioli, portabella mushroom ravioli, tortellini, gnocchi, pasta primavera, minestrone (the Italian vegetable soup with beans and the little tube pasta.)
Other cuisines that are easy to go veg are Latin cuisines (lots of rice and beans, tortillas, roasted potatoes, grilled vegetables etc) and also Indian food with all the lovely spices and curries... and most of it is vegetarian.
If you have a good sized family, you could also do homemade vegetable soup, and then set up a baked potato and salad bar with all the fixings and everyone could do their own to the way they like it. Bag salad mix, tomatoes, cucumbers, black olives, whatever you like on salads... then cheese, sour cream, steamed broccoli, sauteed mushrooms, veggie chili, whatever you think you might like to top a baked potato.
For me... like I said... I think Italian is the easiest to do and also the "fanciest" :)

Well, you could make fruit shichcabob thing...I had them at a friends birthday before. You can also make vegetarian sandwiches and put them through a star cookie cutter or something. I don't know if that is what you were going for, but I hope I helped.
