I might not have made your dinner timeframe, but hold on to this for the future if this isn't in time.
You've got a pretty heavy duty meal there, so something like a simple salad would be a smart way to start. But it should be a salad as sophisticated as the rest of the meal. This recipe is based on a salad we used to get at a long-closed restaurant. The salad part was easy to duplicate and we eventually found a lemon vinaigrette recipe that was exactly like the one at the restaurant. By the way, this goes PERFECTLY with Sauvignon Blanc ;D
Arugula Salad with Lemon Vinaigrette
Salad:
arugula
paper thin slices of celery
paper thin slices of fennel
shaved parmesan
Lemon Vinaigrette:
1/3 cup fresh lemon juice
1/3 cup whole grain Dijon mustard
1 teaspoon finely grated lemon peel
2/3 cup olive oil
Place first 3 ingredients in medium bowl. Gradually whisk in oil. Season to taste with salt and pepper. Can be made 3 days ahead. Bring to room temp and rewhisk before using.
Something light, just a nibble so she can enjoy a great meal!
Any one of these:
Sauteed mushrooms
A small caprese salad (fresh mozzarella slices alternated with sliced ripe tomatoes & basil leaves (or a chiffonade of basil, drizzle with EVOO or balsamic vinegar if you want it))
Toasted sourdough or baguette slices, and bruschetta or tapenade
Brie and toast or baguette
A small spring greens salad with feta and dreid cranberries and walnuts in a balsamic vinaigrette
etc.
something small like a ceaser salad . . or house salad . . no meat on it , just vegatables. . . or maybe toasted bread . . . celery and dip also is good , or fruits
orange spinach salad
wash bag of spinach
pat dry add to bowl
add canned manderine orange drained
cut celery onions muchroom
then add light oil vinegar dressing last moment
A small salad will do. Try for something exotic, Mediterranean... You decide.
