You have to gauge the appetites. I would say the following are what I might purchase if I were doing it. Leftovers are better than running out.

11.5lbs beef (about .6 lb per person)
The big container of sour cream from Sam's
6lbs of shredded cheese (.3/lb per person)
2 boxes of the corn chips from Sam's
3 bottles of taco sauce
Three heads of ice burg, shredded
3 Cans olives
Just my idea on it...

just send the janitorial staff to Chipotle or Taco Bell and have them buy 100 tacos and chalupas.

or just ask your janitors to 'hook it up' and cook them at home and bring them to your workplace
