Good, easy-to-do idea for a dessert: Pears poached in spiced red wine! It's been a hit with everybody every time I make it, and doesn't require too much effort! Would be great for a girly night! You'll need:
Pears - I normally go for the Comice type, but William or any others would do!
Red wine - enough to cover the pears in a saucepan, I usually use about 2/3 a bottle when I make 4 of these pears
Sugar - I never measure it out, I just put quite a lot in, probably about half a cup for a standard saucepan.
Cinnamon - again, I never measure it out exactly, but I'd say a few tablespoons will do!
Mix the wine, sugar and cinnamon in a large saucepan, leave to simmer. Meanwhile, peel the pears, leaving the stalks. Add the pears to the saucepan, making sure they're covered by the wine mixture. If not, just make sure you stir regularly so they get evenly soaked in it. Leave for at least half an hour on low/medium heat. I normally leave them for longer so that the pears are well poached and soaked so they're soft and filled with lots of yummy wine goodness! After a while you'll see that the pears become a sumptuous red colour! When you feel like they're done, serve them up with vanilla ice-cream, and/or cream or custard. If you want to make them look a bit more fancy, add some almond flakes!
