Brunch Foods?!
Brunch Foods?
I am getting married next weekend at 10am. We chose to only have a short cake and punch reception, but now I am leaning towards definitely having a very light brunch served as well--then they can leave and go eat lunch where ever they want! (the benefits of an early wedding)
What are some ideal foods to serve at this time? How can we put together something nice? Creativity is a plus!

GREAT ANSWER AMO!!! Here are some things that might help - some of which are available at places like SAM's or Costco
The trick is not to have too many choices - and make it lighter fare -
Smoked Salmon fillet
Bagels (from a real bakery, please)
Cream cheese (softened)
Capers (in a pretty dish - to add to the cream cheese/salmon)
Fresh dill (chopped fine to sprinkle over the salmon)
Plan on 2 oz salmon, 1 oz cream cheese and 1 bagel per guest.
Quiche - of your choice - or a variety - can be meat free if you wish.
An 8" quiche feeds 8 - 10 people
Thinly sliced roast beef (can be done ahead of time)
Horseradish
unsalted butter
small "potato" rolls
Plan on 2 oz beef and 2 rolls per guest
Cut up veggies and good dip
Cut up fruits and sweet dip - vanilla or chocolate or both Serve some hot wings...rice....and ziti! some soul food~

Ingredients
1 pkg O'Brien Hashbrown Potatoes.
8 oz Sour cream.
2 cans Cream of mushroom soup.
1 lb Cheddar Cheese.
Preparation
Mix sour cream and soup together. Stir in hashbrowns and 1/4 cheddar cheese. Shredded cheese on top. Back for 1hour 15 minutes.
Being as a brunch is a combo of lunch and breakfast so you'll need to do meat, I would go with a variety of sausage and ham.
Eggs are a brunch mainstay, do scrambled with cheese. That's an easy one..

get a couple kinds of luncheon meat...put togeter some sandwiches and cut them in fours.
Put them around a pan and the middle is the best part.
In the middle of all those sandwiches...
Get a Pineapple and hull out the center (KEEP THE TOP)
Once you have a big hole in the middle, fill it with your favorite liquor and then start adding more fruits....strawberries, melons, blueberries and when you've filled up the pineapple, put the top back on it and let it marinate over night...
When your ready to serve, put the finger sandwiches on a circle type platter and start stacking them from the outside of the platter and just make it circle around but leave the center open for the pineapple. It's simple and fast and tastes fantabulous. you can never go wrong with crab cakes either full size served over baby greens with a little balsamic vinaigrette or mini ones served appetizer style with a remoulade dipping sauce .you can find some premium frozen ones at sams club also pick up some mini quiche( if serving the latter) a basket of mini croissants and mini muffins with assorted jams and some fresh fruit and cheeses can be beautifully displayed (add some flowers ) and of course mimosas,juice and coffee.congratulations -Finger Sandwiches

Good luck! I go with Julia. Ham is good b/c u eat that with breakfast and lunch so I would definitely have ham. oh and CONGRATS!
