Answers: GUNSMOKE CHILI

2 lbs coarsely-ground lean beef or venison
2 large green bell peppers, chopped
2 fresh jalape?o chiles, chopped
2 medium onions, chopped
2 ribs celery, chopped
6 cloves garlic, minced or pressed
1/3 cup chili powder
1 tbsp. salt
1 tsp. cumin
1 14.5-oz. can diced tomatoes
1/4 tsp. dried ground hot peppers of your choice: (cayenne, jalape?o, habanero, etc.)
2 bay leaves
1 15-oz. can tomato sauce
6 cups water or beef broth
2 15.5-oz. cans kidney or pinto beans

Sauté meat, bell peppers, fresh Jalape?os, onions, celery, and garlic in a Dutch oven with a small amount of oil. Drain. Stir in all other ingredients except beans. Cover and simmer one hour, stirring occasionally. Add beans and simmer another 15 minutes. Makes about a gallon of the tastiest, most satisfying chili you ever ate.
For hotter chili, add more peppers. When I used to eat fish my mum made the best sandwiches by mixing tuna with Sombel Olak (a chilli paste) and using fresh vegetables. Or just lettuce. On a nice roll. Lame I know hahaha but that was my favourite. WHITE CHILI!!! Based on chicken, green ortega pappers and white hominy. Has a wonderful mello flavor, but still a kick with the chilis. Goes great with corn bread. Hope you enjoy! i love an old one i used,
1 lrg. can of tomato juice
1 lrg can of chili -any brand
or 4 sm. cans
1 gr. pepper diced
1 lb. hamburger browned
1 onion diced
chili powder to taste- 1/4 c. to 1/2 c.
put all ingredients into a lrg. pot and cook for half an hour to an hour depending on how you do at simmering.
easy, quick and pretty good, if you season to taste. This is so economical and easy and simple and yet so tasty and makes a pretty big pot of chilli.

Auntie Ruth's Chilli

2- 28Oz cans of Kidney beans
2- 14 Oz cans of Beans with tomato sauce
Chili Powder to your liking
half a Red pepper
half a yellow pepper
half an orange pepper
1 onion
1-28 oz can of diced tomatoes
one pound to one and a half pound of ground beef
dash salt
dash pepper

While browning ground beef I put the cans of beans/tomatoes with juices,in a large pot and simmer and add some chilli powder and taste and let simmer.
Once I have the ground beef browned I add some salt and pepper then add the peppers and onions,both cut into nice size chunks, until they soften a little. Then I put the ground beef mixture into the bean/tomato mixture and let simmer for a few hours. The longer the better of course. And I usually serve over a bed of rice or even just with tortilla chips. Can even just have a bowl with sour cream and shredded cheese on top and green onions and serve with garlic bread. Mmm it is so tasty and simple. hope you try and enjoy :D No matter what recipe I use, I add natural cocoa (a teaspoon). It adds a depth to the complex flavors. Chipotle Steak Chili
1 1/2 lbs beef shoulder top boneless blade steaks or flat iron steaks (I use top sirloin)
1 tablespoon canola oil
2 cups chopped onions
1 cup chopped green sweet peppers
4 garlic cloves, minced
2 (15 ounce) cans kidney beans or pinto beans or black beans, rinsed and drained (I mixed kidney and pintos)
1-2 teaspoon chopped chipotle chiles in adobo
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes, undrained
1/2 cup water, drained (HA! Fooled ya! Don't drain. ,o)
4 tablespoons chili powder
1 teaspoon dried basil, crushed
1/2 teaspoon black pepper
shredded cheddar cheese (optional)
sour cream (optional)
chopped onions (optional) or scallions (optional)
avocados, slices (optional)


Cut beef into ?” cubes.
In a 4-quart Dutch oven, brown meat, half at a time, in 1 tablespoon hot cooking oil.
Remove meat, reserving drippings in pan.
Cook onion, sweet pepper and garlic in drippings until tender; drain fat.
Return meat to Dutch oven. Stir in chipotle chili peppers in adobo sauce.
Stir in beans, tomatoes, tomato sauce, water, chili powder, basil and black pepper.
Bring to boiling; reduce heat.
Simmer, covered, about 1 hour or until the meat is tender. Mom's Crockpot Chili

This is a great recipe for fall. It's warm, spicy, and very filling. I like to top off my bowl of chili with sour cream, cheddar cheese, onions, and Frito's!

1 lb ground beef or ground turkey
2 onions, diced
2 minced garlic cloves or garlic powder
1 green pepper, diced
1 tablespoon jalapenos, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
1 Large fresh tomato (chopped)
1 (8 ounce) can chopped or whole tomatoes
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water

Toppings
sour cream
cheddar cheese
green onions
Frito's

Cook ground meat with onions, garlic, and peppers in a skillet until browned.
Add all other ingredients to a large crockpot set on Low.
Mix in the browned meat, onions, and peppers.
Add beans, cover and simmer 1-2 hours.
Serve with toppings.

This recipe makes a TON of chili... Make it for friends at a party, or be prepared to eat it most of the week!!
