I'm looking for a recipe for a really lovely cupcake... i like them more moist/abit springy. :)

Ingredients? 2 cups all purpose flour

? 1 teaspoon baking soda
? 1/2 cup shortening
? 3/4 cup water

? 1 teaspoon vanilla

Chocolate Cupcake Recipe DirectionsPreheat oven to 350 degrees. Line cupcake pans with paper liners.
Combine all ingredients into large mixing bowl. Mix at low speed for 30 seconds, and scrape bowl. Mix at high speed for 3 minutes.
Fill liners 1/2 to 2/3 full of batter. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
Frost when chocolate cupcakes are completely cool.

? 1 cup 2% milk
? 2 large eggs

Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes.

? 1/2 cup creamy peanut butter
? 3 1/2 teaspoon baking powder
? 1 teaspoon salt
? 1/8 teaspoon baking soda
? 3 tablespoons baking cocoa
? 1 1/4 cups 2% milk
? 1 teaspoon vanilla
? 3 large eggs
Chocolate and Peanut Butter Cupcakes Recipe DirectionsPreheat oven to 350 degrees. If desired, line cupcake pans with paper liners. You may also spray cupcake pas with a butter and flour combination spray that can be found in your local grocery store.

Pick your choice! 2 Weetabix
300ml--12 fluid ozs--just over 1/2 pint of semi-skimmed milk
1 cup--4 ozs mixed dried fruit
2 cups--8 ozs self-raising flour(flour with a raising agent included)
1 egg beaten
3/4 cup--4 ozs brown sugar
1 teaspoon of mixed spice powder( this can be left out or another favourite spice can be added)
1/2 teaspoon of baking powder
Method
Put the Weetabix in a bowl with the milk, dried fruit and sugar, and leave overnight to soak.
Add the flour, beaten egg and baking powder.
Mix together and divide into cup cases, just fill 2/3 full.
Cook for 20 minutes at Gas 5, 375F, 190C.

1/2 cup of Butter or Margarine
1/2 cup sugar
2 eggs
1 1/4 cup of milk
1/2 cup of plain yogurt
100 g melted dark cooking chocolate
1/2 cup of chocolate chips (I usually use the whole 250g packet lol)

mix all the wet ingredients, then fold in the flour to the rest of the mix,

2 cups flour
2/3 cup cocoa
11/4 teaspoon baking soda

4 eggs

1 cup whole mayonnaise
11/3 cups water
Mix first 4 ingredients. Set aside. In large bowl with mixer at high speed, beat next 3 ingredients 3 minutes or until light and fluffy. At low speed, beat in mayo. Add flour in 4 additions alternately with water. Pour into paper lined cupcake tins. Bake at 350 for 15-20 minutes. ( check them around 15 minutes as all ovens are different).
Chocolate fosting
Heat 2 cups heavy cream in a saucepan until almost boiling(don't let it come to a boil). Add 4 cups chocolate chips. Stir until chocolate is melted. Add 2 teaspoons vanilla. Stir and chill in fridge for about an hour or until hardened. Beat on high speed until light and fluffy. Frost cupcakes and enjoy! use your favorite box cake and use egg beaters instead of real eggs. I found this out on accident, but egg beaters for whatever reason makes the finished product very VERY moist and fluffy use a red velvet recipe to make cupcakes, TRUST me they will be moist and delicious!! INGREDIENTS:
* 8 ounces butter (1 stick), cut into small pieces
* 2 cup granulated sugar
* 4 large eggs, room temperature
* 2 teaspoons vanilla extract
* 3 cups cake flour, stir before measuring
* 2 1/2 teaspoons baking powder
* 1/4 teaspoon salt
* 1 cup whole or 2% milk
PREPARATION:
Heat oven to 350°. Grease and flour 24 muffin cups, line with muffin papers, or generously spray with baking oil/flour spray.
In a large mixing bowl, beat butter on low speed to soften. Increase speed to medium and beat until smooth. Add sugar, about 1 tablespoon at a time. Beat until light and fluffy. Beat in eggs and vanilla; scrape bowl then beat until smooth.
Measure the flour, baking powder, and salt into a bowl; sift once.
Add the dry ingredients to the first mixture a little at a time, alternating with the milk. Continue beating on medium speed until smooth and well blended, scraping the sides of the bowl once or twice. Fill muffin cups about 2/3 full and bake for about 20 to 25 minutes, until a wooden pick or cake tester comes out clean when inserted in the center of one.
