Ok, folks, need your help again...I'm making...?!

Question:

Ok, folks, need your help again...I'm making...?

beef kabobs, (marinated beef, sweet green peppers, sweet onions) on the barbeque, with a dessert of chocolate cake and sauce with whipped cream. So what can I serve with the kabobs as part of the meal? I'm so tired of pasta salads/pototoes! I need some new, fresh ideas!

Answers: How about a tomato, basil, mozzarella salad. They are always a hit :) I use rice with kabobs. I like to make 2 kinds of kabobs, the beef like you said and also chicken with grape tomatos, pineapple and mushrooms. Yummy. Then you can do a couple of shrimp kabobs too. All of these are great on a pile of rice with some soy sauce. try sweet potato chips, just cut big chunks of sweet potato and either roast in the owen with a bit of olive oil or just deep fry.. How about a rice pilaf or a tabbouleh salad? They have mixes for them at the grocery stores now- Near East and such. try some rice. You can flavor it with chicken broth or boullion, add some veggies into it and create your own frun rice salad.I Try what they traditionally eat with kabobs in the east. Flatbread which can be dipped in meat juices and used to hold the beef (they use sheep) and vegetables. This is one of my favorite veggie dishes for the barbecue:

Slice up three or four zucchini, a medium onion, and three Roma tomatoes. Pour Italian salad dressing over the vegetables, then wrap securely in aluminum foil. Set on the barbecue grill and broil there for about 20 to 25 minutes. well... you could try this... but just a suggestion... thick chips/wedges with gravy

or my better idea... crumbed fish corn on the cobb grilled with the kabobs. Steamed - broccoli or artichokes with real butter to dip it in
Roasted corn on the cob
Fried plantain bananas
Garlic fried potatoes
White rice with real bacon bits profusely mixed in. Its summer, sweet corn is coming in. Roast it on the grill or boil it. Perfect accompaniment to kabobs. What about some cous cous or cole slaw...Two of my favorite recipes are on Martha Stewart.com

Garden Vegetable couscous
and
classic creamy cole slaw

if you want a hot side dish how about just some grilled vegetables, some zuchinni or summer squashes, asparagus, tomatoes all grilled at the same time as your kabobs

maybe even just simply sliced tomatos & mozzarella with basil and some balsamic vinegar & olive oil I would do a tomato salad.Chunk up fresh tomatoes, purple onion, mozzarella cheese, pour Italian dressing over.Add fresh basil and serve.

When I do kabobs I do the meat and veggies separate. The meat takes a wee bit longer.Enjoy! Try a wedge of cabbage, place it in aluminum foil with a few pats of butter on top, salt and pepper. Wrap it up and place on the grill. Cook for about 20-30 minutes, depending on the size. It's really good! It's one of my favorites. Also, you can cut up potatoes, a few slices of onion, butter and salt and pepper, and cook the same way. I'm sure squash would be good also. Hope this helps! rice How about rice pilaf? Take a cup of rice, white or brown. (brown will take longer to cook). Put it in a saucepan with a tbsp of hot oil and cook it for a few minutes. Don't brown it. Add either 2 cups of water or broth, dried thyme leaves, onion and garlic powders and salt and pepper to taste. Cook till all liquid is absorbed. Fluff before serving.
