Cooking my boyfriend dinner tonight, but as he is trying to lose weight he's not eating carbs in the evenings anymore....any ideas of something tasty I can make him...he has quite a large apetite


Answers: Dessert = Make sugar free jello with heavy cream, (English cream)

Dinner Part 1= eggwhites, bacon, cheese(havarti, cheddar,Monterey Jack) [peppers (green & red raw) 4 carbs per cup], Use real butter to cook the eggs in, the cheese will help make him feel full.

Dinner Part 2= Any fish has zero carbs, buy it fresh and make it with spices but remember not to use premixed spices, they tend to have sugars in them. No breading.

Salad= Baby Spinach leaves(2 carbs per cup), rasberry vinaigerette


A no carb diet can get very boring, but there are cook books out there. Try to let him know eating some carbs is ok, cutting back is the key. I normally put strawberries and pine nuts in the salad but they have carbs. I find it easier to eat no carbs for breakfast and lunch rather then dinner. Dinner I have very low carb meals.

Breakfast eggs and meats and cheeses, lunch order sandwiches don't eat bread just insides. etc.

Cheers! Oh by the way sauces, premixed things all carry carbs, fruits and most veggies do as well. some of the recipes above mine are containing these items. If he wants zero carbs for dinner you should buy a carbohydrate counter book to assist. You would be surprised that almost everything has carbs. Zero carb diet can be done, but has high limitations and can't be heathly if you do it too long. did you want a healthy dinner or a carb free one cause you can't have it both ways THE MAIN COURSE
For the chicken nuggets and vegetables, you'll need to purchase some peanut butter logs and peas-and-carrots candy mix. (Both candies are sold by the pound at most candy stores.)

On each dinner plate, arrange four or five peanut butter logs and a small handful of the candy mix. Right before serving, add a scoop of vanilla ice cream or frozen yogurt to each plate. Top with gravy--a spoonful of caramel sauce or butterscotch topping.

The last laugh is sure to be yours when your kids try sipping this colorful beverage. It's actually flavored gelatin, so you'll need to prepare it ahead of time.

Dissolve a package of dessert gelatin according to the directions on the box (orange to look like iced tea; raspberry, strawberry or lemon to resemble fruit punch).

Primavera Sauce follows

Slice squash in half lengthwise. Scoop out the seeds with a spoon as you would a pumpkin. Then completely submerge both halves in boiling water and cook for about 20 to 25 minutes, or until the inside is tender to a fork and pulls apart in strands. (It is better to undercook if you are not sure). Remove, drain, and cool with cold water or an ice bath to stop the cooking. Then use a fork to scrape the cooked squash out of its skin, and at the same time, fluff and separate the squash into spaghetti-like strands. Discard the skin.

Reheat the squash strands by dipping with a strainer in boiling water just before serving. Top with Primavera Sauce.


Primavera Sauce:
4 tablespoons unsalted butter (1/2 stick)
1/2 cup small broccoli florets, lightly blanched
1 cup heavy cream
1 egg yolk
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan
1/4 cup chopped fresh parsley leaves
Salt and pepper
Fresh basil leaves, for garnish
Grape tomatoes, sliced in half, for garnish

Melt 2 tablespoons butter in a medium saucepan over medium high-heat. Add broccoli and saute for about 1 minute. Then whisk in cream and egg yolk and cook for only 1 to 2 minutes. Next, add garlic and cheese and whisk quickly just to heat through. Remove from heat and stir in the rest of the butter and the parsley. Pour over or toss with the hot spaghetti squash. Season with salt and pepper, if desired. Garnish with fresh basil leaves and grape tomatoes. Go with some salmon and a nice salad. Im doing the carb free thing too !

Try making him a nice salad - use spinach, cucumbers, peppers (try orange or yellow they are nice and sweet) you could put in some fresh herbs as well, like basil or thyme for some extra taste. Have some toppings available for him to choose (sunflower seeds or different nuts, cheeses)

You could also make him a nice roast beef, or steak to go with it.
If he prefers lean protein , grill up some chicken or even make him some Shrimp kebabs, with onion, and other veggies.

Chicken with spiced tomato couscous

2 chicken breasts
200ml/7fl oz boiling water
1 tbsp medium curry paste
1 lime, juice only
150g/5oz couscous
handful of cherry tomatoes, quartered
To serve
100g/3?oz tzatziki
handful of mint leaves

Method
1. Heat a grill pan until very hot. Chargrill the chicken breasts for 10-12 minutes turning once. (Alternatively, cook under a hot pre-heated grill.)
2. Place the couscous in a large bowl.
3. While the chicken is cooking, measure out the boiling water and stir in the curry paste and lime juice.
Pour over the couscous and cover with cling film.
4. After a few minutes, add the cherry tomatoes to the couscous. Fluff up the couscous with a fork.
5. To serve, divide the warm couscous between two plates. Place the hot chicken breasts on the couscous and top each with a spoonful of tzatziki. Scatter with mint leaves

or Steak with roast vegetable couscous

150g/5?oz couscous
100g/3?oz rump steak
2 tbsp red wine
a little beef stock
salt and freshly ground black pepper
For the roasted vegetables
1 tbsp olive oil
2 cloves garlic, peeled and chopped
1/3 red pepper, cut in cubes
? onion, cut roughly
75g/3oz sprouting broccoli

Method
1. Preheat two medium-sized frying pans.
2. Preheat the oven to a hot heat.
3. Place the couscous in a medium bowl. Pour over enough boiling water to cover the couscous and cling film bowl. Allow the couscous to steam for five minutes.
4. While the couscous is steaming, make the roasted vegetables. Drizzle the olive oil into the second frying pan. Add the vegetables and fry for two minutes.
5. Transfer the vegetables to the oven and roast for 5-8 mins.
6. While the vegetables are roasting, season the steak well and drop it into one of the frying pans. Fry for three minutes, either side.
7. Remove the steak and set aside. Add the red wine and a little beef stock. Stir to collect the steak juices.
8. Remove the roasted vegetables from the oven.
9. Place the steak on a plate and serve with a spoon of the roasted vegetables and couscous and a drizzle of the red wine sauce.

or Chilli chicken with stir-fried noodles

For the chilli chicken
1 tbsp olive oil
1 chicken breast, cut in half lengthways
? orange, chopped (skin on)
1 tbsp clear honey
? red chilli, chopped
For the stir-fried noodles
1 tbsp vegetable oil
? onion, chopped
2 spring onions, chopped
100g/3?oz ready-made egg noodles, cooked according to packet instructions
2 tbsp soy sauce
? orange, juice only
pinch dried chilli flakes
handful fresh coriander leaves, chopped

Method
1. For the chilli chicken, heat the olive oil in a frying pan over a medium heat. Add the chicken and cook for 3-4 minutes on each side, or until golden brown and completely cooked through.
2. Add the orange pieces, honey and chilli and cook for two minutes, turning the breast to coat in the sauce.
3. For the stir-fried noodles, heat the oil in a wok over a high heat. Add the onion and spring onion and stir-fry for 2-3 minutes.
4. Add the noodles, soy sauce, orange juice and chilli flakes and stir-fry for one minute.
5. Add the coriander, mix well and place onto a warmed plate. Place the chilli chicken on top and garnish with fresh coriander leaves. Yum. A whole roast chicken, skin included, with a chicken Oxo, you can have a small amount of veg but nae tatties.If that doesn't sound nice, howz about a huge fry up, nae beans or fried bread!!! steamed white fish with steamed vegetables
