Answers: Its not the same thing, Cake flour contains less gluten than all purpose flour which results in a tender fine crumb cake. If you use all purpose the cake may be a little denser.
You can subsitute 7/8 cups of regular flour and 1/8 cup of cornstarch for 1 cup of cake flour. No, the protein count is different.
