Answers: You actually don't want to. There are flavorful enzymes that "turn off" when a tomato drops below about 50 degrees. The only reason frozen pizza has any "taste" is because of the chemicals they add as flavorants.

When storing tomatoes, if you want to preserve the most taste and nutritional value, canning whole tomatoes is the best method of preservation. And yes, that's even though most of the Vitamin C is lost. Source(s):

Member of the American International Association of Nutritional Education (AIANE) pop them in a bag and toss in freezer Pack it and put it in a freezer!!!!!! put em in the freezer I blanche them in boiling water so you can remove the skins.
Then I place in a single layer on cookie sheets and put in the freezer till frozen.
Put into ziplock freezer bags in the quantity you want.
Works really well. It depends on how you plan to use them. If you want them for something fresh like a salad, it wont work, they will become too mushy after you thaw them. The best way is to bring a pot of water to a simmer. Drop whole tomato's in water for about 20 seconds. Take the tomato's out one at a time and remove skin, it should come of easily with a paring knife, if not drop them back in for another 10 seconds. After peeled, cut in half and remove seeds with a spoon over a strainer in a bowl. Put tomato's and any juice that is below the strainer in Glad freezer bags, they are the best for freezing, try to get out as much air as you can. You should also wrap the bags when closed in some foil to lengthen the freezer life. When ready to use, defrost in fridge overnight. cover them in foil, then just put them in the freezer Sometimes I just freeze them whole, to use in stews and casseroles (cut when still partially frozen, they just turn to mush), or I make up tomato sauce, and freeze that finished product.
