Chocolate Turtle Cheesecake

Comments:
A cheesecake reminiscent of those turtle shaped chocolate and caramel nut bars. Garnish with whipped cream, chopped nuts, and maraschino cherries if desired.

Ingredients:
2 cups vanilla wafer crumbs
2 tablespoons unsalted butter, melted
1 (14 ounce) package individually wrapped caramels
1 (5 ounce) can evaporated milk
1 cup chopped pecans
2 (8 ounce) packages cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup semisweet chocolate chips

Instructions:
1. Preheat oven to 350 degrees F (180 degrees C). In a large bowl, mix together the cookie crumbs and melted butter. Press into the bottom of a 9 inch springform pan.
2. In a heavy saucepan over low heat, melt the caramels with the evaporated milk. Heat and stir frequently until smooth. Pour caramel sauce into crust, and top with pecans.
3. In a large bowl, combine cream cheese, sugar and vanilla; beat well until smooth. Add eggs one at a time, mixing well after each addition. Melt the chocolate, and blend into cream cheese mixture. Pour chocolate batter over pecans.
4. Bake in preheated oven for 40 to 50 minutes, or until filling is set. Loosen cake from the edges of pan, but do not remove rim until cooled to prevent the top from cracking. Chill in refrigerator for 4 hours, or overnight.

Makes 12 to 16 servings.

Turtle Cheesecake

Ingredients:
2 cups crushed chocolate wafer cookies (or 2 cups crushed vanilla wafers may be used)
6 tbsp. butter or margarine, melted
1 (14 oz.) package caramels
1/2 cup milk
1 cup coarsely chopped pecans
3 packages (8 oz. each) cream cheese, softened
3/4 cup granulated sugar
1 tbsp. vanilla extract
3 eggs
2 oz. semisweet chocolate

Instructions:
- Preheat oven to 325°F (160 C), if using a silver 9-inch springform pan (or to 300°F/150°C if using a dark nonstick springform pan). Mix crumbs and butter; press firmly onto bottom and 2 inches up side of pan.
- Place caramels and milk in small microwavable bowl. Microwave on HIGH 3 minutes or until caramels are completely melted, stirring after each minute. Stir in pecans. Pour half of the caramel mixture into crust. Refrigerate 10 minutes. Cover and refrigerate remaining caramel mixture for later use.
- Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over caramel layer in crust.
- Bake 65 to 70 minutes or until center is almost set. Run knife or metal spatula around side of pan to loosen cake; cool before removing side of pan. Refrigerate 4 hours or overnight.
- Microwave reserved caramel mixture on HIGH 1 minute; stir. Pour over cheesecake. Melt chocolate and drizzle over cheesecake. Store leftover cheesecake in refrigerator.

Makes 12-16 servings.

------------AND, LASTLY...

Brownie Caramel Cheesecake

1 (9 ounce) package brownie mix
1 egg
1 tablespoon cold water
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk
2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1 teaspoon vanilla extract
2 eggs
1 cup chocolate fudge topping

- Preheat oven to 350 degrees F. Grease the bottom of a 9 inch springform pan.
- In a small bowl, mix together brownie mix, 1 egg and water. Spread into the greased pan. Bake for 25 minutes.
- Melt the caramels with the evaporated milk over low heat in a heavy saucepan. Stir often, and heat until mixture has a smooth consistency. Reserve 1/3 cup of this caramel mixture, and pour the remainder over the warm, baked brownie crust.
- In a large bowl, beat the cream cheese, sugar and vanilla with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Pour cream cheese mixture over caramel mixture.
- Bake cheesecake for 40 minutes. Chill in pan. When cake is
thoroughly chilled, loosen by running a knife around the edge, and then remove the rim of the pan. Heat reserved caramel mixture, and spoon over cheesecake. Drizzle with the chocolate topping.

Actually I design gourmet cheesecakes and it sounds like my turtle cheesecake would fill the bill. I do not give out my recipes. sorry.

Blue Sea....your recipe is amateur. Hope you enjoy it. Well, Ms. Babe is full of herself, is she not. Anyway, I too bake gourmet cheesecakes from scratch BUT have this easy breezy starter recipe for beginners:


12 oz box of Vanilla wafer, crumbs (2 c)
1/2 c margarine, melted
14 oz caramel candies, unwrapped
5 oz evaporated milk
1 c chopped pecans or walnuts
16 oz cream cheese, softened
1/2 c sugar
2 eggs
1 c (6 oz) semi-sweet chocolate chips, melted
2 tsp vanilla
1 jar of Hot Fudge Ice cream topping (optional)

Preheat oven to 350 degrees.
Mix crumbs and margarine; press into bottom of a 9-inch spring pan -- line the inside rim of the spring pan with wax paper.

Bake 10 mins.

Microwave caramels and milk in a small microwave oven-proof dish on high for 4-5 mins or until melted, stirring every min.

Pour over baked crust.

Top with chopped nuts.

Beat cream cheese and sugar at medium speed with an electric mixer until smooth and well blended.

Add eggs, one at a time, mixing well after each egg.

Blend in chocolate and vanilla, pour over pecans.

Place pan on cookie sheet. Bake 30 mins.

Loosen cake from rim of pan; cool before removing rim. Refrigerate.

Warm up the Hot Fudge Topping and pour over chilled Black Turtle Cheese Cake.

Serves 10 to 12

Now if you want even easier, go to the store and buy Jello box cheesecake, make it up, put chocolate and carmel ice cream topping on it. chocolate,caremel cheese cake!!!!!!!!!!!!! and to avoid taking out your teeth brush them often...................LOL Me.......hmmmm.......want my recipe? Your teeth will be fine sweet thing........... CHOCOLATE CREAM CHEESE BARS

1/2 c. butter
1 oz. (1 square) unsweetened chocolate
1 c. sifted flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. salt
2 eggs, beaten
1 tsp. vanilla
3/4 c. chopped walnuts or pecans
1 (8 oz.) pkg. cream cheese, softened
1/4 c. butter
1/2 c. sugar
2 tbsp. flour
1 egg, beaten
1/2 tsp. vanilla
1/4 c. chopped walnuts or pecans
Caramel Sundae Topping

Preheat oven to 350 degrees. Combine 1/2 cup butter and chocolate in a 2 quart saucepan. Cook over low heat until melted. Stir until smooth. Remove from heat; cool to room temperature.
Sift 1 cup flour, 1 cup sugar, baking powder and salt. Stir dry ingredients into cooled chocolate mixture; mix well. Add 2 eggs and 1 teaspoon vanilla, blend well. Stir in 3/4 cup nuts. Spread batter into a well greased 13"x9"x2" baking pan.

Combine cream cheese and 1/4 cup butter in a bowl. Beat until smooth and creamy, using electric mixer at medium speed. Combine 1/2 cup sugar and 2 tablespoons flour, and gradually add to the cheese mixture, beating well. Beat in 1 egg and 1/2 teaspoon vanilla. Spread over chocolate batter. Sprinkle with 1/4 cup chopped nuts.

Bake at 350 degrees for 30 to 35 minutes or until no imprint remains when lightly touched with finger. Immediate drizzle with caramel sauce. Cool in pan on rack. Cut into 3"x1" bars. Makes 39. easy and qucik recipe: (heavenly....will melt in ur mouth!!!)

Preheat oven to 350 degrees.

spilt dinner roll in half and apply butter on the inside and outside. then sprinkle ground cinnamon inside and outside. coat the inside with 2-3 tbsp of sweetened condensed milk.

then close the 2 halves of the dinner roll. pour 2-3 tbsp of thick caramel or chocolate syrup on top and poke the outside a few times with a fork for the syrup to penetrate. now pour condensed milk on top of the syrup in a spiral fashion and sprinkle a lot of ground cinnamon. can top with chopped pecan peices.

place on aluminium foil or baking sheet and keep in oven for 5-6 minutes. serve hot. Sweet Cinnamon

Ingredients:

1 Cinnamon
1 Tanning bed
Chocolate
Carmel
Cream cheese
Plastic wrap
Bed

Instructions:

Fold the Cinnamon into the Tanning bed for 20 minutes a day for 30 days.
Cover the Bed with Plastic wrap.
Place freshly browned Cinnamon on the wrapped bed.
Add Chocolate, Carmel, and Cream cheese to taste. phwoarrrrrrrrrrrrrrrrrrr Cinnamon and chocolate huff huff huff huff phwoarrrrrrrrrrrrrrrrr pant pant pant dribble dribble
