I have a Big Garden and have fresh Zucchini and?

I don't have a food procceser and would like to know if I can shred it without Buying one? And does anyone have a recipe for Zucchini Bread?


Answers: Zucchini Bread

3 eggs, lightly beaten
1 cup salad oil
1 cup sugar
2 cups zucchini, grated, squeezed, and tightly packed
2 tsp vanilla
3 ? cups flour
1 tsp baking powder
1 tsp baking soda
3 tsp cinnamon
1 tsp salt
? cup raisins
1 cup nuts, chopped.

Preheat oven to 350° F. Have ready 2 well-greased 8 ? x 4 ? – inch loaf pans.

Mix first 5 ingredients. Sift together dry ingredients; combine with zucchini mixture. Add raisins and/ or nuts.

Makes 2 loaves. Bake 1 hour, cool 10 minutes. Remove from pan. Individual loaves make welcome gifts. You may substitute ? cup coarse bran for ? cup of the flour. Source(s):

Zucchini Bread
3 cups unbleached all-purpose flour
1 tbsp ground cinnamon
1 teaspoon baking soda
1 1/4 teaspoons baking powder
1 teaspoon salt
1 cup canola oil
2 ? cups sugar
3 large eggs, beaten
2 cups grated zucchini
1/4 teaspoon black walnut extract (optional)
1 tbsp vanilla extract
Preheat the oven to 350 F. Grease two 4x8-inch loaf pans. In a medium-sized bowl, combine the flour, cinnamon, baking powder, baking soda, & salt. Mix well. Combine the oil & sugar in a large mixing bowl. Beat until light. Add the eggs, one at a time, beating well after each addition. Stir in the zucchini, vanilla, & black walnut extract, if using. Add the dry ingredients & stir just long enough to combine. Divide the batter between the prepared loaf pans. Bake the loaves for about 1 hour, or until a tester inserted in the centers comes out clean. On wire racks, cool the breads in the pans for 10 minutes. Invert onto the wire racks & cool completely. Makes 2 loaves. You can grate it with any grater, with or without the peeling. And you can freeze it when grated too.You will need to remove the center seed area on the larger zucchini before grating. It is great it omelets, Carrot cake, in soups and spaghetti too. My favorite is to dip slices into egg and milk, then into cornmeal, and then fry them until crispy....yummy! Zuccini Bread

3 teaspoons cinnamon
1/2 teaspoon baking powder
1 cup chopped nuts (optional)

Preheat oven to 350.
Sift together all dry ingredients.
Beat eggs, add sugar, oil, zuccini and vanilla.
Combine both mixtures.
Add nuts.
Grease and flour 2 loaf pans.
Bake 1 hour.
