Diner Special Meatloaf

1 lb. lean ground beef

1/2 cup KRAFT Original Barbecue Sauce

1/2 cup dry bread crumbs

1 egg, lightly beaten

1-1/4 cups water

3/4 cup milk

2 Tbsp. butter or margarine

1/2 tsp. salt

1-1/2 cups instant potato flakes

3 oz. PHILADELPHIA Cream Cheese, cubed

2 KRAFT Singles

PREHEAT oven to 375°F. Mix meat, barbecue sauce, bread crumbs and egg. Shape into loaf in 12x8-inch baking dish.

BAKE 55 minutes. Meanwhile, bring water to boil in medium saucepan. Add milk, butter and salt; stir in potato flakes. Add cream cheese; stir until completely melted.

SPREAD potato mixture over meatloaf; top with Singles. Bake an additional 5 minutes or until Singles begin to melt.

---------Bert's Special Meatloaf

1 lb ground beef
3/4 lb ground lean pork
3/4 lb ground veal
1 cup dry breadcrumbs
1 1/4 cups milk
1 egg, beaten
1/4 cup minced onions
1 clove minced garlic
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon celery salt
1/4 teaspoon dry mustard
1/4 teaspoon sage
1 tablespoon Worcestershire sauce
bacon



1. Mix all ingredients and form into a long loaf.
2. Lay bacon over meatloaf and along the sides.
3. Place into a 9x13 baking pan and bake at 350 for 1 1/2 hours.
4. I usually add nearly cooked potatoes for the last 20-25 minutes and sometimes I even make a gravy from the pan drippings.
5. Remove from pan and cover with foil for 5 or 10 minutes to let the juices settle.
6. Slice and serve.

---------------Spanish Style Meatloaf Recipe

INGREDIENTS:

* 1 1/2 pounds ground beef
* 1 1/2 pounds ground pork
* 3 large onions diced
* 8 cloves garlic minced
* 4 eggs
* 2 tablespoons Romano cheese (or more to taste)
* 1 cup milk
* 1 cup Italian bread crumbs
* salt and pepper to taste
* .
* Sauce:
* 2 tablespoons olive oil
* 1 (l6 oz.) can tomato sauce
* 1 medium onion
* 4 cloves garlic minced
* .
* Garnishes:
* 1 can green peas
* 1 small jar of stuff green olives sliced
* 3 hardboiled eggs chopped

PREPARATION:
Preheat oven to 325°.

Place both meats in large mixing bowl. Combine milk, eggs, bread crumbs, cheese, onions, garlic, salt and pepper to taste. Mix very well! Shape loaf and place in large baking dish, then cover and bake in 325° oven for 1 hour.

While meatloaf is cooking make the following sauce:
In 10" sauce pan (or skillet) place tomato sauce, onions, garlic, olive oil and salt to taste. Cover and cook for l hour. When meatloaf is done, take cover off and pour the sauce on top of meatloaf. Put loaf back into the oven uncovered for about 15 minutes.

When meatloaf is done garnish with peas, chopped olives and eggs on top (really is pretty). Serve with mashed potatoes vegetable and nice green salad with red wine.

You can add more of the cheese or bread crumbs to the mixture if you wish. I usually do because I never measure anything just go by feel.

------------Greek Stuffed Meatloaf

1 1/2 lbs lamb, ground
1 1/2 lbs hamburger
2 eggs
1/4 cup milk
2 cups quick oats
2 tablespoons oil
1 large onion, finely diced
2-3 garlic cloves, minced
1 cup minced fresh parsley
2 teaspoons salt
1 teaspoon cumin
1/8 teaspoon pepper
Filling
1 bunch fresh spinach, chopped or 2 (10 ounce) boxes frozen spinach, chopped, thawed
1 egg, beaten
1 1/2 cups feta cheese, crumbled
1/4 cup black Greek olives, pitted and coarsely chopped
Topping
1/2 cup ketchup
1 teaspoon cinnamon
3 tablespoons parmesan cheese
Tabasco sauce (optional)



1. Preheat oven to 350 degrees.
2. Mix meats.
3. Combine with eggs, milk, and oats.
4. Set aside. Saute onions in oil over moderate-low or low heat until for 20-30 minutes until translucent and golden.
5. Estimate the cooking time for the onions and approximately 3-4 minutes before the end of the cooking, add the garlic. Combine meat mixture with onions, garlic, parsley, salt, cumin, and pepper.
6. In a 9" X 13" baking dish, shape 2/3 of meat mixture into a hollow shell.
7. Combine egg, spinach and feta cheese from filling ingredient list. Pack this filling into the hollow cavity of the meat loaf.
8. Sprinkle with chopped olives.
9. Cover filling with remaining meat mixture. Combine topping ingredients and spread over meatloaf.
10. Bake for 70-80 minutes.

----------------Italian Meatloaf

2 eggs
1 1/2 lbs lean ground veal
1/3 cup parmesan cheese, grated
1 tablespoon fresh parsley, chopped
4 garlic cloves, minced
3/4 teaspoon salt
3/4 teaspoon pepper
8 leaves swiss chard, blanched and drained
4 slices cooked ham
4 slices provolone cheese
4 sprigs fresh parsley
2/3 cup dry breadcrumbs
2 tablespoons olive oil
1 onion, finely chopped
2 stalks celery, finely chopped
1 (28 ounce) can tomatoes
1/4 teaspoon tomato paste
1/2 teaspoon dried oregano



1. In a large bowl, beat eggs; mix in veal, cheese, parsley, 1/4 of the garlic and 1/2 teaspoon each salt and pepper.
2. On a sheet of plastic wrap, pat half of the veal mixture into a 8 x 7 inch rectangle. You will make two loaves this way.
3. Lay half the Swiss chard, ham, cheese and parsley sprigs, lengthwise down the centre of the meat mixture.
4. Lift up long sides of plastic wrap to centre, pressing into loaf shape; seal edges.
5. Repeat with the remaining veal mixture, Swiss chard, ham, cheese and parsley sprigs.
6. Place bread crumbs in shallow dish; roll each loaf in bread crumbs to coat.
7. In a large, deep non-stick skillet, heat olive oil over medium-high heat; brown loaves on one side, using two spatulas, turn over and brown on second side.
8. Lift loaves out of pan and place in 13 x 9 inch glass baking dish; set aside.
9. In same skillet, fry onion, celery and remaining garlic, until softened, add salt and pepper. Cook about 5 minutes.
10. Add tomatoes, tomato paste and oregano, break up tomatoes with a spoon; bring to a boil.
11. Reduce heat and simmer until thickened, about 15 minutes; pour over loaves.
12. Bake at 350 degrees until meat thermometer registers 170 degrees, approximately 45 - 55 minutes.
13. Let stand for 5 minutes.
14. To serve - slice thickly and spoon sauce over top.
