Boneless Pork Sirloin - How to cut and cook?

I wanted to try something different, so I bought uncut boneless pork sirloins. While choosing this meat, I realized that I would have to do some research on how to cook it.... so here I am!

It's 2.3 lbs and looks kind of like a roast.

Most importantly, I need to know how to cut it. After that, any recipes are greatly appreciated!

Put some oil in a large pot, season meat grenoruisly, put meat in on high heat turning often until its good and seared all around, Then add plenty of chopped onion, some whole garlic cloves, chopped celery. Cover with a can of chicken broth and water. Simmer on low for several hours, then remove lid, and allow at least half of the liquid to evaporate, This is were the flavor gets good and concentrated. Then just cut it up into slices and serve, goes good with mashed potates and gravey and biscuits.
