Answers:

Be careful about using soap. The metal is porous and soap is extremely hard to rinse all the way off. If you're not really careful, your food will get a nice soapy flavor. Instead, just wash it with hot (really hot) water and scrub it with whatever you like.

Here's the trick: dry it with a towel, and put it back on the burner. Allow the high heat to evaporate any remaining water left in the pores of the plate. It only takes about a minute at high heat.

When it cools again, apply a very light coat of oil to the plate with a paper towel. This will keep any moisture in the air from causing rust while the plates are stored. If you use them often, vegetable oil is fine. However if you use them only once a month or so, the veggie oil will turn rancid. In this case, use mineral oil. Finally, after you apply the oil wipe the plate down with a clean paper towel. This removes any excess oil and ensures that the plate is entirely coated with oil.
