Vegetarian Shepherd's Pie


This recipe had an origin--a long time ago--with lentils and barley. But I've adapted it to my carnivore husband who raves about it. My measurements are basic, but you can improvise by adding corn, or any veggies you have laying around. The more, the merrier.

Ingredients
1 Small onion, chopped
2 cloves Garlic, pressed
2 Tomatoes, chopped
1 Carrot, chopped
1 stalk Celery, chopped
12 oz Veggie ground "meat" (soy-based)
1 tbsp Parley
1 tsp Italian seasoning herbs
2 Big potatoes
1/2 cup Warm milk
2 tbsp Butter
Salt and pepper
1/4 cup Colby or cheddar cheese (optional)

Preparation
1. Boil potatoes in high heat. This should take 1/2 hour to 45 min.

2. In the meanwhile, saute the onion and garlic in medium high heat.

3. Add the tomatoes and cook for about 10 min, or until very soft.

4. add the carrots and celery. Add some water to the pan, and cover immediately so it will steam the vegetables. Cook until the carrots are soft, adding water if necessary to prevent veggies from sticking to the pan.

5. Add the veggie ground, the parsley and seasonings. Add salt and pepper to taste.

6. Once it's heated though, set aside.

7. Once the potatoes are cooked, strain and mash them. Add the warm milk,butter, and salt and pepper.

8. To assemble: put the veggie ground mixture in a 8" x 8" cassarole dish, spreading evenly. Put the mash potatoes on top, spreading evenly, being careful not to overflow. Top with cheese, if you'd like.

9. Bake at 350 degrees for 30 min. Enjoy.

Cook's Notes
If you don't have real potatoes, you can use instant mash potatoes, but it won't be as flavorful or tasty. I use "the good ground" original, by Ives Veggie Cusine, but any brand should work fine.
