Can you tell me how to fry zucchini to make it crispy?
I grew more zucchinis than I can give away or eat! LOL I want to try to pan fry them, but what should I use for batter or breading? I am planning on frying in vegetable oil (NOT shortening) OR if you know any way to bake/broil to make them crispy that would be good too. Thank you!

Fried Zucchini Fritters
Ingredients:

5 eggs -- separated
5 tablespoons all-purpose flour
3 large zucchini squash
1 pound Monterey Jack cheese
1 cup vegetable oil
1/2 onion -- minced
1 cup tomato puree
2 cups chicken stock or water
1 teaspoon oregano
Salt and pepper to taste
Preparation:
Beat egg whites very stiff, but not dry. Beat egg yolks separately and fold gradually into whites. Fold in flour. Parboil zucchini and slice into rounds. Place a slice of cheese between 2 slices of zucchini. With fingers lift zucchini and cheese carefully and dip into the batter, coating thoroughly. Fry in hot oil until golden brown. Drain on paper towel. Brown onion in 1/4 CUp of remain ing oil. Add tomato puree and stock or water. Rub oregano between palms of hands into sauce and season with salt and pepper. Cook 20 minutes. Just before serving, drop fritters into sauce, heating thoroughly. Serve immediately.
2.Another recipe is to simply slice squash thinly, dredge in flour, dip in egg wash, cover in bread crumbs, cornflake crumbs with parmasaen cheese mixed in or Italian bread crumbs, and fry up in hot oil.
3. You can make a batter like you would for deep fried onions or fish. Same thing. Fry. Serve with a good tomato sauce for dipping or lightly cover with cheese and sauce. Yummy
4.There are some recipes for doing this in the oven--less fat, but I have not as of yet tried it this way. Maybe do as above, sprinkle with a generous amt of olive oil and crank the oven to 400 and bake turning over midway until brown and crispy...20 minutes or so. depends on how thin you slice.
