This is a wonderful and totally fail safe recipe

Preparation time: 10 minutes
Cooking time: 20 minutes

Basic Ingredients (serves 2):
- olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 100 g long grain rice
- 2 bay leaves
- 1 bouquet garni
- 300 ml vegetable stock
- seasoning

Suggested optional ingredients :
- 1 celery stalk, finely chopped
- 1/2 red or green pepper finely chopped
- 2-3 rashers of bacon, finely chopped
- 100 g prawns or chicken

Directions:

Preheat oven to 200°C.

Heat approx.15ml.
olive oil in pan.
(I use a sauté pan to save on dishes)
Gently sauté the onion (and celery and pepper and bacon if using) for approx.5 minutes.
Add the rice, bay leaves, bouquet garni, seasoning and stock (use fish or chicken stock if preferred)
Stir well and (add other optional ingredients)put on the middle shelf of the oven, uncovered, for 20 minutes.
Stir well, remove bay leaves and bouquet garni and serve.
Excellent hot or cold.
