How do I prepare Cornish Game Hens?!


Question:

How do I prepare Cornish Game Hens?

I'm taking care of my dad while my mother is away (meaning preparing his meals and keeping his house clean) and when I went to start washing his dishes, I saw 3 Cornish Game Hens defrosting in the sink.
I can only assume that he wants the hens for dinner, but I'm not much of an omnivore, so I have no idea how to prepare them.
Does anyone have a suggestion on how to cook them, including ingrediants, applications and cook time?
Also, what would be a good side for the hens?

(This is a challenge for me in that my stomach churns a bit when I touch meat in the shape of a body, but I can do this!)

BAKED CORNISH GAME HENS

4 whole Cornish hens
1/2 c. butter
1 onion, quartered
1 orange, quartered
4 slices celery
2 tbsp. parsley flakes
2 tbsp. Mrs. Dash's garlic and herb spice
1 c. white wine

Wash hens and pat dry; place in aluminum foil enough to wrap each hen separately. Stuff each hen with slice onion, orange, and celery. Melt butter until soft. Pat each hen with butter and sprinkle each with parsley flakes and Mrs. Dash's spices. Pour 1/4 cup of wine in each hen and wrap in foil. Bake in 350 degree oven for one hour, or until done. Open foil last 10 minutes to brown. Serve with rice or stuffing.
