most of the recipies ive found,its just roll up hamburger,onions,in tortillas cover in enchiladas sauce,and cheese,should i put that taco seasoning in my hamburger.

No, don't use taco seasoning in the meat because, after all, you are making enchiladas, not tacos. Season the meat with salt, pepper, cumin, chili powder, garlic, onion and any other flavor you desire. Another good idea is to dip the tortillas in the enchilada sauce before you roll the meat mixture inside. This will soften them up as well as add additional flavor to the inside.
