Question:

Anyone know some low fat, easy to cook and tasty?

filling vegeterian receipes? Everyting I find on line sounds lenghty and consist of stuff I wouldn't even know where to buy it from!

I don't like eggplant! and I can't eat green peppers!

Good receipes welcomed and greatly appreciated!

All of these sound so good so far. Thank you for your input. I'm not a vegatarian I just really don't like to cook meat so I don't eat it very often. But I certainly don't oppose. I like veg's but yes I'm picky! Thank you!

wow, your awful picky for a vegetarian but I will try to please your taste buds:

Nutty Asparagus Salad
1 lb. fresh asparagus, steamed for about 5 minutes(tender crisp) and chilled
1/2 c. chopped walnuts
2 oranges, peeled and seperated into sections
3 c. lettuce

Dressing:
2 T. oil
2 T. vinegar
2 T. orange juice
2 tsp. sugar
pepper to taste

Cut the cooked asparagus into 1 inch pieces. Place in a bowl, add the walnuts, orange sections, and salad greens. In a small bowl, combine all the dressing ingredients and mix well. Add the dressing to the salad. Serves 4

Pureed Turnips and Potatoes
1 lb. turnips, peeled, cubed
1/2 lb. potaotes, peeled, cubed
1/4 c. orange juice
1 T. brown sugar
1/8 tsp. ginger
1 T. margarine
balck pepper to taste

In a saucepan, cook turnips and potatoes in boiling water until they are tender. Drain and puree. Return to the saucepan. Add the juice, sugar, ginger and margarine. Cook , stirring it often, over low heat until heated through (about 5 minutes) Add pepper to taste.

Deep Dish Plum Pie
4 c. diced plums
1 c. sugar
1/4 c. flour
1 T. margarine

Pastry
1 c. flour
1/3 c. shortening
1/2 tsp. salt
3 T. cold water

Place plums in pie dish Combine sugar and flour and sprinkle over plums. Dot with margarine. Combine flour and salt in amixing bowl. Cut in shortening with 2 knives. Add cold warer, a tablespoon at a time, and mix well. Roll out pastry 1/8 inch thick. Moisten pie dish rim and lay pastry over plums. Seal edges and prick top. Bake at 400 degrees for 35 minutes.
