Thanks Ms. diamond Girl, but that recipe sounds kinda exoic with the curry powder and such. i'm looking for a simpler recipe that uses readily available ingredients.

If you're going to broil them, it's best to cut out the backbone and flatten them (just push flat with the palm of your hand), if you haven't already. They cook much more evenly this way under a broiler. I like mine pretty simply - the hens have a more delicate flavor than chicken, so I prefer to not do a lot to them. Brush on a little melted butter or olive oil (butter is richer, obviously, but also tends to go straight to my butt! lol) You can sprinkle with a little freshly chopped garlic, if you like, or just some fresh herbs, which are nice if you stuff them under the skin. Sprinkle with salt and pepper and if you like lemon juice and broil. Mine usually take around 30 minutes, but it just depends on how close you have them to the flame. Once they are done, let them rest about 15 minutes before serving - they are great without a lot of fuss! I hope this helped at least a little!
