Fresh salsa for 70 - how much?


We're throwing a celebration with about 70 guests with a taco bar and we want to have fresh salsa as a side. Does anyone have a good estimate on how much we will need?


Answers: While I agree with the first guy that too much is better than too little, I think a cup per guest is a bit much. 1/2 cup seems much more fitting. I would think that you need about one cup per guest. Better have too much then to run out before the guests have had enough. I would make about 15 to 20 lbs of salsa. About 1/2 cup each, assuming they all like it and will all be eating it. Or you could ask them to each bring their favorite salsa, then put it all together and see how it tastes. All you have to do is just supply the beer and margarita's and no one will care.
