Any good ideas for hors devours for a birthday FIESTA party?


I'm having an adult FIESTA party for my birthday on Saturday and would like more great ideas for munchies or finger foods. I already have drinks and decorations covered. Any easy, yet yummy suggestions?


Answers: Taquitos - they come in a box in the freezer section. You cook them in the oven, serve w/Salsa and sour cream on the side (guacamole too if you want).

Also, this is one of my favorites, and there is NEVER any left.
You need a square baking pan.
1 pkg cream cheese. Smear cream cheese in a smooth layer at bottom of baking dish.
Add a can of hormel chili w/or without beans (I like with) and smooth out into an even layer on top of the cream cheeses. then take a can of salsa and smooth that over the chili. Then add a cup or 2 of shredded cheese (the mexican style shredded cheese works well).

When you are ready, put it in the oven to melt the cheese and serve it with tortilla chips.

Make a pitcher of Margaritas and you've got yourself a party!!

When i threw a fiesta party, I bought the SCOOPS tortillas, filled them with the cheese and topped with salsa. only do this if you have time, because it can be very time consuming. very tasty though Don't forget the Guacamole! Another great easy dip is melted Velvetta and salsa mixed together. They sell boxes of taquitos (chicken, beef, bean) in the frozen food section. All you'll have to do is heat them in the oven. You can dress up bagel bites (mini pizzas) with black olives or jalapenos for a fiesta kick. I love this recipe (Chicken Emchilada Ring) from Pampered Chef. I tried it several times and it has been a hit. You do not have to make it in the form of a ring if you do not want to.
Once you mix all of your ingredients, it is a breeze. Good luck and have a happy birthday!
2 cup coarsely chopped chicken
1/4 cup chopped pitted ripe olives
1 cup shredded Monterey Jack/Cheddar blend
1 can (4 oz.) chopped green chilies, undrained
1/2 cup mayonnaise
1 Tbsp Southwestern Seasoning Mix
2 plum tomatoes
1 lime
2/3 cup finely crushed tortilla chips, divided
2 pkgs. crescent rolls
1 cup salsa
1 cup sour cream

Preheat oven to 375 degrees. Mix chopped chicken, olives, cheese, green chilies, mayonnaise and seasoning mix in bowl. Seed and chop one tomato. Slice lime in half. Juice one half of lime to measure 1 t. of juice. Reserve remaining lime for garnish. Add chopped tomato and lime juice to chicken mixture. Reserve 2 T. crushed chips and add remaining chips to chicken mixture. Mix well. Sprinkle reserved crushed chips over flat side of a large cutting board. Place dough onto chips and press down so chips adhere to dough. Separate dough into triangles. Arrange triangles, chip side down, in a circle on a 13" baking stone. Wide ends should overlap in the center and points should be toward the outside. There should be a 5" diameter opening in the center. Scoop chicken mixture onto the wide ends of the triangles. Bring points of the triangles up over filling and tuck under wide ends. Do not cover filling completely. It should show in between each triangle. Bake 20-25 minutes or until golden brown. For garnish, cut remaining tomato into 8 wedges. Cut remaining half of lime into 4 slices, cut in half. Arrange between openings of ring where filling is showing. Serve with salsa and sour cream. Mexican Layered Dip

1 (16 ounce) can refried beans
1 (1.25 ounce) package taco seasoning mix
1 large tomato, seeded and chopped
1 cup guacamole 1 cup sour cream, room temperature
1 cup shredded sharp Cheddar cheese
1/2 cup chopped green onions
1/4 cup chopped black olives

Spread refried beans in the bottom of a (1-quart) shallow edged serving dish (you can use a transparent dish if you'd like). Sprinkle the seasoning packet over the beans. Layer the diced tomatoes over the beans, the sour cream over the tomatoes, and the guacamole over the sour cream. Sprinkle the entire layered dip with cheddar cheese, followed by green onion and finishing it off with a layer of black olives. Cover and refrigerate until ready to serve.

This makes a lot of dip so have plenty of chips on hand. This one is easy!

Thick 'N Chunky Salsa



SPREAD half of each tortilla with 1 Tbsp. cream cheese spread. Spread remaining half of each tortilla with 1 Tbsp. beans, then drizzle with salsa. FOLD each tortilla into quarters to make triangle. Tapas, my dear, Tapas!!!! here are some ideas:

1. Salsa, guacamole and chips are a must!
2. Quesadilla triangles (consider cream cheese and steak, or chicken and cheddar, along with diced green chili's etc.)
3. Seasoned pork (shredded) bites served in Japanese soup spoons.
4. Taquitos
5. Polenta bites topped with salsa verde
6. Cream cheese and chili dip (spread softened cream cheese in bottom of pie plate or baking dish, top with your favorite canned chili and 1 cup shredded cheddar cheese. Microwave until cheese is melted and bubbling. Top with 1/2 cup salsa, 1/2 cup sour cream, 3 T sliced olives and 2 T chopped green onion. Serve with Fritos)
7. Nachos
8. Chicken wings seasoned cumin and chili powder and served with a spicy ranch dip Definatly frozen margaritas. Chips and salsa and cheese dip. Mini quesadellias with sour cream. Spianch dip with carrot sticks. For dessert mini cakes and cupcakes
