Vegetarian Dishes?


Hi, I'm cooking for my other half, his sister and her husband this weekend. 3 of us are meat eaters and one isn't and I was looking for some good recipes that could either, accomodate everyone, or something that I could adapt to suit both. Previously I have made a curry and made a separate pot with a veg curry, or stir fry and a small pan with only veg etc. I'm thankful for any ideas, I would really like to wow!!

Sorry, if you have nothing useful to suggest then please don't bother posting at all. stuff big mushrooms wiv cheese breadcrumbs and herbs and drizzle sauce made out of slow cooked cherry toms round edge.then buy sum quorn chiken cubes ,made some really creamy mash and cook onions til caramelised put sum mange tout in wiv onions for 5mins so crunchy.in a pan put sum cranbeery sauce til melts.put mash on plate,corn cubes on top then spread veg pretty round edge drizzle cranberry sauce over top jus small bit then serve rest of sauce injug.afters serve creme fraiche or natural yog wiv freshfruit.or cook sum fresh beetroot in pan til soft add seasoning blitz in blender.drip creme frais in top of soup when servingserve wiv croutons.then get soya chiken and cook sum fresh bread slice bread pyt chiken finaly sliced in wiv mayo,on side of plate serve grapes cutin half.afters do melons small cut zigzags in twist aprt 2too parts.in abowl mix philidelphia cheese wiv herbs of ya choice or chives mix then scope yuk outa melon use melon baller or teaspoon to do small rouns of cheese put into melon yummy. try dog Yes, the separate plate idea is a good one. this would work with Quiche Lorraine, or pies such as vegetable and mushroom pie. You could probably find lots of recipies on the net by tapping in vegetarian dishes in Google. Just cook what you'd normally have, tough if the veggie does't want it.
That's what they would do if you went to their house. Do they eat veggie-mince?
If so, you could make chili con carne or spaghetti bolognese.
Or, if not, a vegetable lasagne. Use the usual ingredients, but use chopped mushrooms and other veg instead of the meat. what about pasta? you could do a marina sauce and do a seperate sauce with meatballs and one pasta for all served with salad and breadsticks and a nice wine? Meatless Chili Colorado

2 (28-ounce) cans whole tomatoes, undrained
4 (15-ounce) cans kidney beans, drained and rinsed
4 cups water
4 cups chopped onions
1 cup chopped celery
1 cup chopped fresh flat-leaf parsley
1/4 cup tomato paste
3 cloves garlic, finely chopped
1 tablespoon vegetable oil
1 tablespoon chili powder
1 teaspoon ground black pepper
Cooked rice for accompaniment
Combine tomatoes with juice, kidney beans, water, onions, celery, parsley, tomato paste, garlic oil, chili powder and pepper in a large stockpot. Bring to a boil, stirring to combine. Reduce heat to medium and cook, partially covered, for 3 hours, stirring occasionally.
Meanwhile, cook rice according to package directions; set aside. Serve chili over rice.

STUFFED PEPPERS VEGETARIAN

6 med. green peppers
2 c. cooked rice
1 lg. egg, slightly beaten or 1/4 c. Eggbeaters
1 c. chopped onion
1 sm. can tomatoes or 1 (10 oz.) can Rotel tomatoes
1 tbsp. vegetable oil
1 c. bread crumbs or wheat germ
1 1/4 c. grated Cheddar cheese

Cut off tops of peppers and remove and discard seeds. Dice tops, discarding stems, and mix all ingredients, reserving 1/2 cup cheese. Stuff peppers and place in a round microwave casserole. Put extra filling around peppers. Peppers should fit tightly. Cover with plastic wrap, piercing 4-5 times for vents. Microwave on High 15 minutes. Sprinkle with reserved cheese. Cover; let stand 2-3 minutes. Then serve. This dish can be made ahead and frozen for later use. Do not cook until after thawed. vegetarian pizza Large red peppers cut length ways in half, stuffed with cherry tomatoes, olives and crushed garlic and fresh basil, topped with buffalo mozzarella and a drizzle of olive oil baked in the oven. Can be served as the veggies main course with new potatoes and large salad, and can also be used as a veg accompaniments to everyone else main course. Feta cheese is also a good alternative to top them with.

Enjoy. cardboard. A hearty pasta dish with various veggies would please everyone most likely. Serve with garden salad and crusty italian bread. You could make a veg lasagne and also have some nice Italian sausages with peppers and onions. Round it out with a salad.

The vegetarians can eat just the lasagne and salad. The meat eaters can have sausages too. This always go`s down very well with all, roast veg, and potatoes, grill lot`s of big tomatoes but cut them one way across then the other way before grilling them and let them burn , the skins i mean then they are done mean while,wash and boil some brown rice,when done drain, and lay to one side open a tin or 3 of fresh peas, add to rice, the backed beans in tomato sauce, add them also,chop 4 medium onions,, then 4 red and green pepers , and do sameadd them buy some veggie ready made sausages sprinkle with jerg powder lot`s and oven bake until brown, slice them up and add also to the rice, once mixed up put into a large bowl and watch it disappear, have a bowl of side salad too. I have yet to see a plate that has not been emptied, and I have been doing that for years. good luck
