Why does my meatloaf crack when cooking?



Answers: It probably doesn't have enough liquid in the mixture. I use ketchup, eggs, and some milk when I make meatloaf. The eggs help hold it together. I use 1 egg for every 1 lb. of ground beef. Hope this helps!! put a pan 1/2 full of water on the rack underneath the rack the meatloaf is cooking on and it adds some moisture to the oven air which helps the meatloaf not crack.

mom my bakes her meatloaf with a can of mushroom soup pured on top. it's good and keeps it moist, too, but the pan of water trick is really great. there isn't enough liquid to hold it together. you should put a bunch of ketchup on top of it to keep it nice and moist
