12 fresh sandwich rolls

Mix together: Fresh garlic (to taste) 1 tbsp. poppy seeds 1 tbsp. minced onions
24 slices ham or turkey (shaved)

Slice rolls and brush inside of both sides with melted butter mixture. Place 2 slices of meat on bottom half. Top with 1 cheese slice.

Replace top of roll and wrap each sandwich individually in tin foil. Place all sandwiches on a cookie sheet and heat for 30 minutes at 350 degrees in the oven. Immediately transfer into a cooler. The sandwiches will remain hot until your tailgate party. Everyone loves them!

TAILGATE CHILI

2 lbs. coarsely ground beef
1 c. water
1 can (16 oz.) whole tomatoes, pureed
1 onion, finely chopped
1 tsp. garlic powder
1 tsp. red pepper sauce (more if you like it hot)
1/4 c. chili powder
1 tsp. ground oregano
1 1/2 tsp. salt
2 tsp. ground cumin
1/2 tsp. cayenne pepper
1 can (12 oz.) beer

Cook meat over high heat in a 2 quart pan until meat loses color. Add water, pureed tomatoes, onion and garlic powder. Bring liquid to a boil, reduce heat, cover and simmer for 30 minutes, stirring occasionally.
Add red pepper sauce, chili powder, oregano, salt, cumin, cayenne and beer; stir well. Simmer uncovered 1 hour longer or until meat is tender and stew is thickened.

TAILGATE BEANS

1/2 lb. ground beef
10 strips bacon, cooked & chopped
1/2 c. onion, chopped
1/3 c. brown sugar
1/4 c. ketchup
1/4 c. barbecue sauce
2 tbsp. mustard
1/4 c. molasses
1/2 tsp. chili powder
1/2 tsp. pepper
1 (1 lb.) can kidney beans
1 (1 lb.) can pork-n-beans
1 (1 lb.) can lima beans

Cook beef and bacon until brown; pour off fat. Combine with remaining ingredients. Pour into casserole dish, bake at 350 degrees until bubbly, (20 to 30 minutes). Wow, I am truly impressed by the 1st answer!

My hubby & son went tailgaiting this morning with friends, although they did not have tickets to see the game. That tailgated, then came home.

According to hubby, you need 4 basic food groups for tailgaiting: beef, poultry, pork, & seafood. Prep your food the night before in a marinade, and toss them onto your grill in the parking lot. Kabobs also work perfectly in tailgaiting.

Sides could include your traditional beans, corn on the cob, chili, cole slaw & potato salad. Every now and then I'd throw a bowl of salad in and trust me, people ate that too!

Basically, ANYTHING goes! have fun! Tailgate food should be dictated by the cook, the food desires of the guests, and ease of cooking and serving. Here are some great ones:

1. Senate Bean Soup, kept hot in thermos's and served in mugs.
2. Turkey and cheese rollups
3. Chinese Chicken salad, served in take out containers with chop stix
4. Lobster rolls
5. Grilled sausages, bratwurst, and kielbasa with a variety of mustards, rolls etc.
6. Baked beans in a crock pot (keeps warm!)
7. Chips and salsa, dips etc.
8. Cookies and brownies Depends on how big your set up is-but most foods for a tailgate could be

Hot Dogs/sausages

BBQ ribs

Chicken wings/Nuggets

Beef Brisket

Cole Slaw
Baked Beans
Potato salad
Nachoes with Cheese
Shrimp Salad
plain salad
