Afternoon tea?


Looking to make some kind of snack-like food that can be served for an afternoon tea. Nothing to heavy, but something to tie you over. Something like a chip/dip or deviled eggs. You know what I mean? Any ideas?


Answers: CUCUMBER TEA SANDWICHES

3 cucumbers, peeled and sliced thin (seedless are great)
8 oz. cream cheese, softened
1 pkg. "Hidden Valley Ranch" dressing mix
1/2 C. mayonnaise
1/4 C. sour cream
Loaf of cocktail rye bread
Dill weed for garnish

Place cream cheese, dressing mix, mayonnaise and sour cream in a medium bowl and mix until well blended. Chill at least 1 hour for flavors to come out. Spread each bread slice with a tsp. of the mixture and top with a cucumber slice. Sprinkle with dill weed and arrange on a platter.

SQUASH APPETIZER CUPS

1-1/2 c. shredded zucchini
1-1/2 c. shredded yellow summer squash
1/2 c. diced onion
1/4 c. parmesan cheese
1/4 c. Colby cheese
1/4 tsp. dried parsley
1/2 tsp. dried marjoram
1 clove garlic, minced
1 c. biscuit baking mix
1/2 tsp. seasoned salt
Pepper
4 eggs, lightly beaten
1/2 c. vegetable oil

In a large skillet, saute the zucchini and squash over medium heat for 10 minutes. Transfer the squash mixture to a small bowl and add the onion, cheeses, parsley, marjoram and garlic. In a large bowl, combine the biscuit mix. Add seasoned salt and a dash of pepper. Mix. Stir in the eggs and oil just until combined. Fold into the squash mixture. Fill greased miniature muffin cups three-fourths full. Bake at 350 F. for 20-25 minutes or until golden brown. Cool for 5 minutes before removing from pan. Serve warm. Makes about 3 dozen. Here are some healthy snack recipes:

1. Apple Rings...
You need:
- 4 apples (McIntosh and Golden Delicious work well)
- 1 tablespoon of lemon juice
- 3 tablespoons of water
- And a string of sturdy thread or twine

Instructions:
Peel, core, and slice the apples into rings about 1/8 inch thick. Mix the lemon juice and water in a shallow dish. To prevent discoloring, dip each ring into the mixture, then pat dry with a paper towel.

String the fruit through the center of each ring and hang in a dry, warm place (near a fireplace or sunny window is ideal). The rings will take 1 to 2 weeks to dry, depending on the room conditions. You can periodically taste them to determine if they are ready (dry rings will have a chewy, almost leathery texture).

To expedite the process, dry the apples in a warm oven. Instead of strinning the rings, place them on a wire cooling rack that rests on a baking tray (so the air can circulate). Put the tray in a 150deggrees oven and allow the rings to dry for about 4 hours, turning once midway through. When the rings have no moisture left, remove them from the oven and eat, or cool before placing them in a small bag for storing. Makes about 30 rings.

2. Juicy fruit Salad...
You will need:
- 1 cup of shredded apples
- 1/2 cup of diced strawberries
- 1/3 cup of diced peaches
- 1/4 cup of chopped grapes
- 3/4 cup of orange juice
- 1 tablespoon of lemon juice
- And the juice of half a grapefruit

Instructions:
Stir the shredded apples, strawberries, peaches, and chopped grapes in a medium-sized bowl. Pour the orange, lemon, and grapefruit juice over the fruit and stir well. Serves 3 to 4 people.

Dipped Strawberries...
- 1/4 cup of heavy cream
- 1/4 cup of sour cream
- One 5-ounce high-quality chocolate bar
- 1/3 cup of confectioners' sugar
- 2 pints of strawberries, washed with stems left on

Instructions:
In a medium sized bowl, whisk the heavy cream and sour cream until the mixture is smooth. Refrigerate covered for at least 2 hours. Working over a piece of waxed paper, use a potato peeler to shave the chocolate bar. Transfer to a small bowl and set aside. Sift the confectioners' sugar over the waxed paper, then pour into a seperate small bowl. Just before serving, pour the cream mixture into a small bowl, too. Arrangethe strawberries around the three bowls on a platter and serve. Guests should first dip the strawberries into the cream, then the sugar, and finally into the chocolate. Serves 6 to 8.
