You could make pizza. Just go to the store and by the pizza doe that is pre-made. You could get pizza sauce and cheese plus all the toppings. Have the kids put all the toppings on their own pizza and you cook it. Fun fun stuff.
My kids love to put peanut butter and jelly on a tortilla then roll it and eat it. Hot dogs wrapped in croissants is another good one they like. Also making their own kind of luchable with cheese they cut as well as meat and crackers.
Let them make their sandwich of choice and then cut out pieces with cookie cutters. All of a sudden, PB&J is special!

You'll need to have all the ingrediants on hand ahead of time, but here are some fun ideas for little folks to make:

1. Spaghetti-O's with shredded cheese; carrot stix with ranch dressing; french bread.
2. Turkey or ham rollups: 1 flour tortilla, 1 T herb cream cheese, 1 tsp mayonaise, 2 slices low fat american cheese, 3 oz turkey, 1 lettuce leaf, 2 slices tomato, rolled up and eaten like a "cone"; celery with peanut butter; oatmeal cookies.
3. Chili Pie: 1 bag fritos corn chips (open length wise), 1 can chunky chili; 3 T shredded cheddar cheese, heat chili and pour over the top of the fritos in the bag (place in bowl first), top with cheese and serve. Serve with cherry tomatos and a brownie.
4. Stuffed baked potatos: cut baked potatos in half and top with shredded cheese, bacon bits, sour cream or yogurt, chopped green onion (opt.) or chili, pork and beans, or sliced meats. Heat until cheese melts. Serve with carrots and celery stix.
5. Chicken tenders: breaded or unbreaded, marinate sliced chicken breasts in Italian dressing overnight. Bake in 350 degree oven for 40 minutes. Serve with ranch dipping sauce and celery stix. For breaded tenders, roll marinated slices in panko and parmesan cheese and bake until golden browned and cooked thru.
6. Mini pizzas: 1/2 english muffin, 2 T pizza sauce, 3 T shredded mozarella, 1 tsp sliced olives, 1 T crumbled turkey sausage. Place in microwave or oven and cook until cheese melts.
