Well...we are having cooler weather here and the 2nd day of rain, so how about something warm, like homemade chicken pot pie or a big pot of chili, or some hearty navy bean soup, and fresh baked biscuits or crusty rolls or even garlic bread with cheese. It'll make the whole house smell good, and knock the chill off your bones! And for dessert, how about fresh baked cookies, or apple or pumpkin pie...it is autumn after all.
make omletes and roasted potatoes. it's really fun, like having breakfast for dinner. my favorite omletes are sauteed mushroom and swiss cheese or ham and parmisan.
I am going to have cheese and bacon potato skins, with chicken goujons. Also some cheese bites and volavents. Looking forward to - hope some of this may give a little idea.

preheat oven to 450

what you will need:

get a box of bow tie pasta ( really any shape will do )
your favorite spagetti sauce or pizza sauce
bag of mozzarella cheese
and your favorite pizza toppings
( examples: pepperoni, green peppers, onions, black olives, pineapple, mushrooms and etc anything goes really)

sautee all your favorite pizza toppings ( just not the cheese!)
boil enough noodles for what you need and drain when done
divide the noodles into oven safe dishes or one casserole dish if everybody like the same pizza toppings
top the noodles with the sauce and stir in the sauteed toppings bake for 10 minutes and then take out and top with cheese and put back in the oven for a few minutes or until cheese is melted take out and enjoy!
Casseroles make good meals!! like a Chicken enchiladas are good.
my mom use to make one with potatoes(scalloped) peas, and ham in it layered ham on bottom,then potatoes then peas sometimes with cheese on top sometimes with mushroom sauce on top. an idea??
Mustard Glazed Corned Beef with mashed potaotes and rolls
INGREDIENTS
1 (5 1/2 pound) corned beef brisket
2 tablespoons pickling spice
1/2 cup light corn syrup
2 teaspoons prepared yellow mustard, or to taste

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Place the corned beef brisket into a Dutch oven, and season with pickling spice. Fill with enough water to cover the roast, and place the lid on.
Bake for 2 1/2 hours in the preheated oven. Then, remove it from the Dutch oven and place on a broiler pan. Preheat the oven's broiler.
While the meat is roasting, mix together the corn syrup and mustard in a small saucepan. Bring to a boil, and cook over medium heat until slightly thickened, about 5 minutes.
Spread the mustard glaze over the roast, and broil for 5 to 7 minutes, until the glaze is shiny

I made this the other night.... Mexican Macaroni and Cheese

1 lb browned ground beef
8 oz cooked macaroni
3 cups cheddar cheese plus
1 small jar salsa

Combine hot cooked pasta with two cups of the cheese (I added a little milk to make it creamier)

In a caserole dish layer...1/2 the pasta, 1/2 the beef, 1/2 the salsa, and repeat. Top with remaining one cup of cheese.

Bake at 350 until hot and bubbly.
