you didn't mention how much food is required to fill the three of you, but assuming your female, and not gluttons, may I suggest:

3 Rock Cornish hens, inexpensive, generally about $2 a piece. Each stuffed with a few tablespoons of wild rice mix from a box. Brocolli florets and sauteed mushrooms with fresh sage goes great here. A simple green salad too.

Stuffed pasta shells. Get the jumbo ones, there's about 20 in a box. Brown some ground beef, add some spices to make it zesty. Add cup or so of shredded cheese, a can of diced tomatoes and green chilies. Boil the noodles until al dente, stuff full with mixture, top with a can of French's onion rings. But in a baking pan and bake 30 minites at 350. With this, try some ice cold aplesauce to clean the palate. And I would serve fresh green beans alongside.

Finally, crepes are very inexpensive and simple to make.
You could stiuff them with a cooked and boned chicken from the store, some pimentos, maybe some pearl onions and cilantro. pour some semi-diluted soup over them. Serve two on a plate with cottage cheese and some peeled pears.
i think that you should serve soemthing that everybody agress on something
I would make potato salad, rolls, grilled chicken or steak. It all depends really on what type of food each person likes.

If they don't like potato salad make mashed potatoes with country gravy.
there are many ways to make chicken!!
jerk chicken, to chinese chicken,to barbecued to any thing even to mexican so if your friends all like different chicken is the best route to go!!
they have websites for many different ways to cook that way you wont have to use 3 different meats!!
What do your friends like?
