Here's a suggestion.

Research! reasearch the time period as thouroughly as possibly so that all the details can be accurate. when someone asks why you aren't using forks, you can tell them it's because forks weren't invented until after such time period. It can be a fun learning experience for any of your guests.
Ooooo... I want to come!!!

Of course, invitations can be rolled in the "hear ye, hear ye" fashion. Is this to be a kitschy kind of party, or more serious SCAdian type of affair?

Requesting that people come in costume will go a long way towards helping establish the theme. Gifts could include small bottles of wine or mead, candles in medieval looking holders or small bunches of flowers with ribbons that tell what each flower stands for (very popular in some courts).

Food can be made fun, too. Big turkey legs or other cuts of meat, bread "trenchers", goblets for drinks - flowers strewn over food was popular as well. Make sure you have music - a hidden CD player with period music will help a great deal.

Have fun!
If you are of drinking age, supply mead.....a wonderful honey based beverage that has been enjoyed for centuries :)

Gifts? Hmmmm that is a good one. Do a google search for renaissance festivals and you will come across vendors that supply things for those kind of events.
If you're going to serve food, the meal is served on a plate made out of bread. This is followed by a servant bringing each guest rose scented water, a basin and a towel to refresh themselves. After that, the official taster, a carver and butler arrive.

Mind your manners. In the middle ages, you shared your meal with other people. Don't leave fingerprints on the table, pick tour teeth with a knife, keep both feet on the floor when reaching for a dish and don't scratch your head.

The meal begins w/ bread and butter then the entrement. a first course consisted of soup, beef, fowl, veggies and cooked fruit. The bread trenchers(plates) are cleared away and fresh ones are presented.

Have the King's Fool juggle for entertainment, serve the second course, have dessert and serve with a spiced wine called hippocras. When the King finishes his wine, the banquet is over.

Hope this gives you a little more info.
That sounds like fun!!! I would use playing cards for place markers and serve Cornish hens ( no utensils, of course). A large decorative display of various fruits for the table centerpiece. Oh, and how about some music from the era and a jester. And if not a jester in person, you could possibly make some favors using the jester's likeness. After all, every good medieval party has to have a jester!

You should make soap! That would be sooo ironic seeing as how they didn't really have soap or bathe back then. Go to a craft store like Michael's or Joanne's and by 3-4 large blocks of glycerin soap. They should also have like essential oils and dried herbs that you can put in the soap. They you just melt the soap in the microwave, pour it into the molds that you got from the craft store and mix in the mix-ins! You'll want to do this like 2 days before to give yourself enough time to be calm and relax while doing it ( this is important because hot, melted soap burns like hell when it comes in contact with skin!). Then you could find some nice textured paper and wrap the soap up with twine. Cute, ironic, and fun!
Turkey leggs, beef stew, ale, potatoes, etc.
