Shrimp Entrees?!


Question: I am having a dinner party tonight for the girls (it's ladies night). I am making steamed king crab legs and I need an idea for a shrimp entree. I wanted to make something saucy that will go over rice. Any ideas????????

SAUCY ITALIAN SHRIMP

2 tbsp. butter
1 med. onion (chopped)
1 med. green pepper (chopped)
1 jar Ragu Italian cooking sauce
2 tbsp. lemon juice
1/2 c. white wine
1/8 tsp. ground rosemary
1 lb. shrimp (cooked and drained)
3 c. cooked rice

In a large saucepan, saute onions and peppers in butter for 5 minutes. Add Ragu Italian cooking sauce, lemon juice, wine and rosemary. Bring to a boil, cover and simmer 5 minutes. Stir in shrimp and heat briefly. Spoon over rice and garnish with chopped parsley and lemon wedges as desired.

New Orleans Shrimp

Serve as an entree or appetizer. This dish can be prepared ahead of time. Make the sauce. Combine shrimp and sauce in dish as directed and keep refrigerated until ready to bake up to 8 hours.

Preparation Time: 5 min.
Cooking Time: 15 min.
Serves: 4

Ingredients:

1 1/2 lb Shrimp / prawn, medium, raw -- or large, thawed if frozen
3 tablespoon Butter, with salt
1 tablespoon Chili powder
1 1/2 teaspoon Pepper, black, ground -- coarse ground
1/2 teaspoon Oregano, ground (dried)
2 clove Garlic, raw -- chopped or 1 teaspoon prepared minced garlic
1 1/2 tablespoon Sauce, Worcestershire
1/2 cup Wine, table, red, dry -- or white
1/2 teaspoon Salt

Preparation:

1. Preheat oven to 400F.

2. Combine all ingredients except shrimp in saucepan and simmer for 5 minutes.

3. Arrange shrimp in one layer in ovenproof dish. Pour sauce over shrimp.

4. Bake for 10-12 minutes or until shrimp are firm.

5. Suggested to serve with crusty bread.

Creamy Shrimp-and-Spinach
Ingredients

4 cups of rice
1 (6-ounce) package fresh baby spinach
1 tablespoon butter
1 (8-ounce) package sliced fresh baby portobello mushrooms
1 large white onion, chopped
2 teaspoons minced fresh garlic
1 cup reduced-sodium chicken broth
1/4 cup dry white wine*
6 ounces 1/3-less-fat cream cheese
1/2 teaspoon salt
1/4 teaspoon plus 1/8 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground black pepper
1 pound peeled cooked medium shrimp, tails removed (about 41 to 50 shrimp)
1/3 cup grated Parmesan cheese


Preparation
Cook rice according to package directions, Set aside.
Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add mushrooms, and cook, stirring occasionally, 8 minutes or until browned. Add onion, and sauté over medium heat 10 minutes or until tender. Add garlic; sauté 1 minute.

Stir in chicken broth and white wine. Increase heat to medium-high, and cook, stirring often, 8 minutes or until mixture thickens slightly. Reduce heat to medium. Stir in cream cheese and next 3 ingredients until smooth. Add shrimp, and cook until thoroughly heated. Pour shrimp mixture over rice mixture; Sprinkle evenly with grated Parmesan cheese, and serve immediately.

*1/4 cup reduced-sodium chicken broth may be substituted.
