What are some good dinner ideas for 2-3 year olds?!

Rigatoni w/ butter and cheese sauce.

-Cook pasta
-Put hot pasta in a bowl w/ butter and shredded parmesan or mozzrella cheese. Mix it up good until cheese is melted.

Cut up the rigatoni in 3 or 4 pieces for him. And cold carrots on the side for a veggie.
mac and cheese, soup, rice and curry
Baked beans on buttered toast. Favorite as a child, and still eat it today!
Fruit salad
Sausage rolls
Macaroni and cheese you can add hamburger or cut up Hot dogs just be sure to cut hot dog into very small pieces so they don't choke

What are you feeding him? You could try cooked baby carrots, broccoli,.....meat loaf, mac and cheese with hotdog in it, fish sticks, finger foods in general. Maybe some homemade mashed potatoes or potato wedges various pre-packaged rice meals..etc.

Happy Face burgers
Potato Pizza
turkey and cheese or ham and cheese rollups
oven-barbecued ribs
meat loaf with barbecue sauce and mashed potatoes
fish sticks and spaghetti
chicken and dumplings
matzoh balll soup

These have generally been successes with my toddlers. I always find that when I let the kids help with the cooking they are far more enthusiastic about eating. Good luck!
I was just watching Good Morning America the other day and they said that between 2 - 3 is when children are the most picky. Just make sure you offer them different types of food each night, even if they don't eat it. Apparently kids have almost 10X's as many taste buds are adults and food pickiness is genetics. I wouldn't worry about it. To make it easier on yourself prep his dinners twice a week and reheat them. Make yourself dinner each night and just put a little on his plate to try. Just promise him all he has to do is try the food. If he doesn't like to eat it he doesn't have to. I did this when my daughter was 2 - 4. It was horrible. All she wanted to eat was pizza, hot dogs, green beans, spaghetti and lo mein (no vegetables). I finally stopped. She's 6 now, and still doesn't like chicken or eggs (go figure), but she is very healthy and likes a lot more food. She loves all seafood and fish except scallops, sushi, steak, ham, all types of veggies, etc. The one thing I made sure of was that I didn't allow snacks if dinner wasn't eaten. If I felt that she really didn't hav enough for dinner she was allowed to have celery and dip or peanut butter.
You can make hot dogs and roll them up in the pillsbury dough i think the cresent rolls. Maybe cut the hot dogs down the middle a little and stuff them with cheese then roll them up and bake until brown.

You can also make a chicken pot pie? Do kids like that ? lol i know i did. :( I made a really easy one too , pehraps you can try that and buy the already made crust.
just give him a few finger foods...i hear that Cheerios is a good cereal that young kids should start off eating... i think that fruits and vegetables is a good way to go also.... just make sure he isn't allergic to anything...trust me, it could get nasty.
Kids that age love finger foods. Hot dogs cut up, carrots cooked or raw cut up, chicken nuggets. Mac & Cheese, little finger sandwiches. If you want them to start using a fork or spoon, soups are good, or peas and carrots.
It doesn't seem to matter what you cook, they won't try it. My daughter surprised me tonight, though, by eating the sausage and peppers I made. However, she wouldn't eat it all together, she had to have each thing separated out on her plate.
