Does anyone know a good meal that I can cook for my co-workers?!
Answers: They are fairly traditional eaters and love meat. It needs to be something that I can prepare ahead of time. There is no kitchen to use in the office, just a refrigerator and a microwave.
Make a hearty soup or chili !!. Cook it the night before and it tastes better the next day. And it's easy to carry.
Wendy's Chili
2 lb ground beef
1 qt.( 32 oz) tomato juice ( not sauce!)
1 (29 oz) can tomato puree
1 ( 15 oz) can red beans
1 medium onion, chopped
1/ 2 C diced celery
1/2 C diced green pepper
1/4 C chili powder
1 tsp. cumin
1 & 1/2 tsp garlic powder
1/2 tsp each ... pepper, oregano, sugar
In frying pan, brown ground beef and drain well. Place drained beef and all ingredients in a large pot . Simmer for 1 1/2 hours... stirring frequently.
Serve with sides of chopped onion , sliced jalapenas, and shredded sharp cheddar

Try making some Sweet 'n' Sour Meatballs
INGREDIENTS
3 eggs
1 medium onion, chopped
1 1/2 cups dry bread crumbs
1 teaspoon salt
2 pounds ground beef
2 tablespoons vegetable oil
SAUCE:
3 1/2 cups tomato juice
1 cup packed brown sugar
10 finely crushed gingersnap cookies
1/4 cup white vinegar
1 teaspoon onion salt
DIRECTIONS
In a bowl, combine the eggs, onion, bread crumbs and salt. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, brown meatballs in batches in oil. transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
In a saucepan, combine the sauce ingredients. Bring to a boil over medium heat, stirring until cookie crumbs are dissolved. Pour over meatballs. Bake, uncovered, at 350 degrees F for 40-45 minutes or until meat is no longer pink.
Pot roast, meat easy to reheat

put a beef roast in a crock pot- season it ahead-p;ug in and let it cook until noon-say 9-noon--it should be done in 3 hrs
a small roast will handle a small office
big pan of enchiladas... or lasagna... and a green salad with a few dressings...
My neighbors just loved it when I made an old fashioned roast with potatoes, onions, carrots, all sitting in the gravy! A pan of fresh biscuits... and your'e done. One pan wonders!
I would do the same with smoked sausage, potatoes and corn! Any combination that you just love!
