Dinner ideas? QUICK!!?!


Question: Im having some friends over tomorrow for dinner.....Im a pretty good cook, but I dont have that much money to go all out with an expensive dinner. There will be 4 of us all together.
I just need some good ideas on what I should make for dinner....Ill spend a little money, but not a lot?

By the way- I just had speghetti today, so we dont want that, and I dont really like hamburgers!

roast a chicken with some herbs, bake some red new potatoes and a salad. Starch, veggie and protein.......good to go!

How about some tacos and some chips and salsa?

try pizza, you could have your friends come and put on toppings and itll just be fun and your friends can be involved this way to, just buy the already made pizza dough cheese and toppings, but italian is easiest

make breakfast!!! scrambled eggs, bacon, sausage, and pancakes!!! that would be sooooooooooooooooooooo fun! and dont forget the hash browns!!!!!

Chicken Tacos. Take some breasts (at least 4) slice em up like fajitas, fry em up in a pan and add taco seasoning just like you would for regular ground beef tacos. You will need some shredded lettuce, tomato, cheese, salsa, sourcream... well you get the idea. I can feed about 10 people for less than 30 bucks.

Actually, after reading your question again. Just have a big taco party. Tacos are cheap and easy to make. Everybody loves homemade tacos.

Try this it is great for dinner parties and is so simple to make. Plus it makes a ton so there is plenty to freeze or have as leftovers. For 4 people you could cut the recipe in half if you do not want leftovers. Hope you enjoy!

3 cloves garlic, minced
1 onion, chopped
3 tablespoons margarine
2 tablespoons all-purpose flour
3 (14 ounce) cans chicken broth
4 cups half-and-half
1 (10.75 ounce) can condensed cream of chicken soup
1 can rotel diced tomatoes and green chilies
1 can yellow corn drained
1 can black beans drained
1 rotisserie chicken pulled ( I prefer to only use the breasts)
1 (1.27 ounce) packet dry fajita seasoning
16 ounces tortilla chips
8 ounces shredded Monterey Jack cheese

DIRECTIONS
1. In a large pot over medium heat, saute the garlic and onion in the butter or margarine for 5 minutes. Add flour and stir well, cooking for 1 minute more. Add the broth and half-and-half. Bring to a boil and reduce heat to low.
2. Add the soup, Rotel, corn, beans, chicken, fajita seasoning. Stir and continue to heat for 15 minutes.

Crumble tortilla chips into individual bowls, add 1/2 ounce shredded cheese to each bowl and ladle in soup. Top each bowl with more crumbled chips, remaining 1/2 ounce cheese and serve.

Boil a chicken, debone it and chop then chop1 onion
and grated Monterrey jack cheese,corn tortillas 1 can of green chili's and Sm sour cream add the green chili's and sour cream to about one cup of the broth. Mix the chicken, chopped onion, and cheese.
in a baking dish/ casserole dish or pan for making enchiladas. This works both ways if you want to do the rolling. If not just layer it and bake45 minutes and make an enchilada casserole. I have other ideas if you want something different you can take 2 green onions some precooked shrimp Wal-Mart I think it is like 4 bucks a bag, mayo,imitation crab meat food process with a little dill weed make a seafood salad
I usually buy 2 of the shrimp bags of salad size and one thing of the crab It makes a great salad for crackers I think I spend about 10-15 bucks when I make it and that is if I have to buy the dill it is like 4-5 buck by itself.
Penn Pasta or linguine with Chicken and I usually buy the $2.50 containers of Parmesan and Romano cheese right by the deli in Wal-Mart and the bags of chicken breast I grill the chicken or leave it whole and lay it on top of the pasta and sauce 1 thing of heavy cream It's not real expensive and my in laws call me to request it. I can't tell you exact measurements because I don't use recipes I just cook what ever I taste in a restaurant This last one can also be varied by adding broccoli

do you have a crock pot or slow cooker??
if yes...brown some pork chops OR chicken thighs/ legs in fry pan ...
peel and dice up a couple of carrots and an onion..put on bottom of crockpot...place chicken OR pork chops that have been browned in fry pan on stove -ontop of carrots and onions...pour some bbq sauce into a cup , add 1/2cup -3/4 cup of water, mix...then pour over chicken OR porkchops..place lid on crockpot/slow cooker and let it cook for 5-6hrs on low.

Make some 5min white rice before serving...add some green beans or peas for color~

If no crockpot/slow cooker...

How about a hearty stew*??with a crisp salad and french loaf

or...baked chicken with roasted potatoes and veggies
or....make chicken fingers, home fries in the oven and some veggies

Red wine mushrooms:

Get a skillet, mushrooms, a tub of butter (not margarine), three-four cloves garlic, red wine.

Heat skillet, get 2 tbl spoons of butter. Melt in skillet. Add minced garlic and mushrooms. Mushrooms could be Button, Shatiki, Portobello or all three. Cook garlic and mushrooms in skillet, till mushrooms start to become golden and soft. Then add red wine, a good amount. Keep the heat high. The wine will begin to reduce (the water in the wine evaporate) and will look thicker and richer. Add salt and pepper to taste. When the butter red wine sauce is thick it's done. Use high heat.


Chicken Alfredo:
Skillet, butter, heavy cream (not milk or half and half), fine grated parmasian cheese, and skinless chicken breast.

Cook the chicken breast as you like. Don't try to over season the chicken since the sauce will be very rich. I usually cook it in a pan with garlic and olive oil. Just plain grilled will be fine. Just add a little salt and pepper. For the sauce get your skillet and heat it up. Use about 1.5-2 TBL of butter. Once melted add heavy cream. A good amount since you will be reducing the heavy cream like the red wine sauce. If you fell you added too much don't worry you can use it. Now the parmasian cheese. I literally grab a fist full and toss it in the skillet. With a spoon stir the sauce so the cheese melts in the sauce evenly and does not stick to the bottom. Let the sauce simmer as it begins to reduce. Once it's rich and creamy remove from heat. Plate chicken and pour sauce over. Sauce could also be used for paste Alfredo.


Fruit kakbob
Skewers, apples, pears, mangoes, peaches, all work well for this. Cut fruit to nice bite size chunks, and pass though skewer. Put on grill just long enough for grill marks to show. Lightly cooking the fruits will caramelize them and make them sweeter.

This is a awesoome recipe. Take a thing of phyllo dough. Make sure it is defrosted and properly taken care of. Lay down a sheet of the dough. Brush it with melted butter and sprinkle it with parmesean cheese. Do that eight times. Then take tomato sauces and put it on top sprinkle it lightly with some cheese. Add any seasonings you like. If you want to add some shredded cicken. Cook and enjoy with a glass of wine. Buy some sorbet for after.

Frankes , prk n beans , fries or chips.
