First, plan for two main dishes to serve a large group. Roast beef is nice for a party (a delectable rib roast, aka prime rib, that serves 25 people or more will costreasonable if you shop at a warehouse store or can find a good deal at a conventional grocery), and so is roast turkey breast, a spiral-cut ham, roast pork tenderloin or the pulled pork barbecue recipe featured.
Then, add a few salads that can be served at room temperature and can withstand a few hours of sitting out on a buffet table. Forget mixtures made with wilty leaf lettuce or melty mayonnaise. Instead, think seasonal roasted vegetable combinations and simple herb-seasoned pasta salads, such as the wild rice salad and the sun-dried tomato pasta salad included here.
Fill in with rolls, condiments such as horseradish and mustard, a platter of cheese and crackers, some vegetables and dip, and some open-and-pour finger food such as nuts, marinated vegetables and pickles, and you've got yourself a party. And don't worry about taking some shortcuts or serving traditional party food such as a cheese platter --
The meat can be roasted the morning of the party (or for a luncheon even the day before). And the salads can be made a day or two in advance and allowed to come to room temperature about an hour before the party.
The morning of the party, buy lots of ice and chill plenty of wine, beer, soft drinks and juices. You'll save yourself hassle if you do this in a spare sink or in a large container (for informal parties, we like a big galvanized tub from a hardware store) that can sit outside on your deck or patio if the weather cooperates. In addition to freeing much-needed fridge space, chilling the drinks outside or in another room gets people out of the kitchen and encourages them to mingle.
Put out nuts and other nibbles for guests to graze on as they arrive, and while you are getting them something to sip. This can all be done ahead and covered with plastic wrap until just before the party. That way, you can concentrate on finishing the final adjustments of carving the roasts and garnishing the salads that will be served after everyone has settled in.
Then light some candles, put on some fun-but-calm music at a low level, and open the door to your friends and family for a relaxed party everyone, including you, will enjoy.

Dips like crab or seafood dip often taste better if prepared the day before.
Cutting all your veggies, onions, peppers etc for the nex day will help tremendoulsy.

Why not just prepare everything the night before and then just cook it in the oven or make sandwich wraps and wrap in saran wrap and then the next day you just slices into thick slices like pinwheels. You can make pigs in a blanket, pizza bagels, stuffed potatos, salads, cheese, pickles, olives
Lasagne is pretty nice, so is pie, you can make ethnic dishes the night before, like Rogan Josh etc. For desserts you could try a lemon and coconut tart or sticky date pudding.

Shrimp mold... My mother makes it on holidays, and my birthday.. It is a hit with everyone!!! Sounds funny , but taste great.. Everyone likes it.
put a whole eye of round in the oven at 300 degrees for 1 hour then lower it to 185 and leave all night. (or in the morning and leave it all day. It will be so tender.
