Birthday party - taco bar?!

Question: I am having a party for my daughter on Sunday. 25 people. I'm having a taco bar. Besides the tacos, what else should I serve? Are Doritos and corn muffins enough or should there be something else? If so, what? Keep in mind (a) I don't want to spend a fortune and (b) there will be cake and ice cream for dessert.

You might want to try some different salsas such as:

MANGO SALSA

12 roma tomatoes, seeded, diced
1 red onion, diced
5 jalapenos, diced(add 1/4 habenero pepper for extreme heat)
2 mangos, diced
1 cup finely chopped cilantro
1 tsp salt
1 tsp ground cumin
1 tsp chilli powder
1/2 cup olive oil
1/2 cup freshly squeezed lime juice
1 tbsp tobasco or other pepper sauce

MIx all of the ingredients together. Refridgerate for 1 hour and then serve. Keep in mind that the salt will draw out the juices from the ingredients and so the mixture may have to be drained from time to time. Save the juice for Bloody Mary's or Caesar.

SALSA GUACAMOLE

Guests will rave about this combination of fire roasted salsa and guacamole -- you'll make it again and again!

Salsa:

1 can (14.5 oz) Muir Glen? organic fire roasted or plain diced tomatoes, well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon coarse salt (kosher or sea salt)
1 clove garlic, finely chopped
1 small fresh jalape?o chile, seeded, finely chopped

Guacamole:

3 ripe large avocados (about 1 1/2 lb) pitted, peeled
2 tablespoons fresh lime juice
1/2 teaspoon coarse salt (kosher or sea salt)
1/2 teaspoon red pepper sauce
1 clove garlic, finely chopped

In medium bowl, stir together salsa ingredients.
In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.

Serve with tortilla chips as desired.

Makes 12 servings (1/4 cup each).

Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

GUACAMOLE

1 ripe tomato, peeled
2 avocados
1/2 onion, minced
1 tablespoon vinegar
1 chopped green chile, or to taste
salt and pepper to taste

Mash together the tomato and avocados. Stir in remaining ingredients.
Serve with warm tortillas.

Optional: Mix in pomegranate seeds for added color and a unique but authentic variation.

Serve any of the above with a variety of chips.

Chips and salsa. Maybe throw out some tortillas too (not everyone likes taco shells) Other than that, I think it's a great idea!

tacos are a great idea! you might add chips and salsa or beans and rice.

It seems that her birthday party is Mexican-ish, so you should try like nachos and stuff with lime (Tostitos lime flavoured might be good).

Assumin you've got salad and dips there's not much more you can add apart from Tequila.

try Mexican cornbread or at least cheesy cornbread and be sure to make home made guacamole

Some veggies would be good--baby carrots, celery sticks/zucchini sticks, broccoli florets

Yummmm! That sounds really good! That sound be enough food. I might also add spanish rice. Its very cheap to make.

Doritos? If you're doing hard shell tacos, the Doritos don't really go with that. Do corn chips instead. How about adding some spanish rice and refried beans for the side dishes. You could also do quesadilla strips for appetizers. For the taco bar make sure you include one red salsa and one green salsa for color. Have a wonderful party! Ole!

TO FIT YOUR MEXICAN THEME i think you should throw in some chips and salsa dip or guacamole! i love guacamole its just soo yummi and to me it looks better than salsa and its not alot of money worth, im spanish and we also like fried (green) plaintain chips and salami its like a big cultural thing you expose them to, or you could just put out the dip and chips or make the taco bar bigger i mean chicken taco , beef taco , turkey taco , different meats different ways or something you can curry some or something spanish food is spicy just have fun with it.

I love mexican, There are these new shells that you can buy to make your own taco salads easy to make and family thought they were so much fun. i don't think you would need doritoes I would do tortilla chips make a cheese dip in the crock pot using velveeta cheese and salsa. You just leave it in the crock to keep it warm and if people want they can make there own nachos. and don't forget the dessert maybe grilled or baked pineapple slices with a aclypso sauce and ice cream This is one of the best deserts I have ever made for company.
calypso pineapple
1/2 cup of worcestshire sauce
1/2 cup honey
1/2 cup dark rum
1/2 cup of light brown sugar
1/2 cup of butter
pineapple cut into wedges

combine all ingrediants in a saucepan and let cook about 10 miutes stirring frequently untill it starts to thicken let cool and serve over pieapple and ice cream . This is sooo good.

have some refried beans and Mexican rice going in some crock pots.
