This menu has no meat, dairy or eggs:

Appetizer:
Tomato salsa with Roma tomatoes, olive oil, Italian seasoning, onion, hot pepper--serve with zucchini chips

Salad:
Salad with mixed greens, cranraisins, toasted pecans, balsamic vinegar dressing,

Main dish:
Beans (no meat- Pintos or black or other bean of choice) and rice

Sides:
Candied yams/carrots

Alternate main dish/side:
Thick, hearty vegetable stew that includes beans--rice

Bread:
French or Italian yeast bread or yeast rolls

Dessert (choice to make):
Fruit cup or baked apples with apple crumble,
melons, chocolate dipped strawberries,
strawberries and melons on kabob,
cherries and pineapple on toothpick kabob.

Beverage:
Tea, Coffee, Colas

keep it simple. make simple soup and simple sandwiches.
you can really make anything for both veg and non-veg, just make something that is supposed to have a bit of meat in it and substitute with anything that's veg.

side dish or main
Stuffed mushrooms

6 oz mushrooms
1 egg
olive oil
1cup Italian seasoned bread crumbs
salt

take them stems off(reserve you need the stems), in a bowl take the tops and coat with olive oil salt and pepper

OK in a separate bowl chop those stems finely add the egg and the bread crumbs, stir up tiny pinch of salt too.

take the tops, line them up in a baking dish take a teaspoon and spoon the bread crumb mixture into each and every one.
bake at 350 degrees F for 15 minutes

Easy. Say it's not cow and after they eat it,tell them. Have a giggle.
