Okay here's a turkey question for you...?!


Question: Does anyone know what the things on the tips of the turkey legs are called? I guess I should explain alittle. They look like little chefs hats. I have never seen any in person but I have seen them on TV and pictures. I need to know how to make them. I am making a turkey cake and I need to put them on the ends of the legs. Any ideas?

The name for them is "panties" because they look like ladies' underwear. They used to put them on crown roasts of lamb or pork. It's a French thing, meant to keep diners' fingers clean while eating barbecued lamb chops.

The Joy of Cooking calls them "paper frills". I'm pretty sure you can still buy them in cooking specialty shops, usually found in larger cities.

Don't know for sure, but I call them cuffs. Not sure how big the cake is but for a turkey you use a piece of white paper about 5 inches by 31/2 inches. Fold it in half longways and tape at the seam. Take some scissors and cut small slits all along the folded edge about 1/2 to 3/4 of an inch deep and fluff it out, then fasten it around the "legs".
Now that I'm reading this it doesn't seem very clear but I don't know how to explain without a diagram. Sorry
