I'll stick with the basic RedHot brand... yes other sauces are great like pico de gallo... but this one is pretty universal condiment... u cant put it on pretty much anything...
i have no clue whats in it besides cayenne peppers.... but i only buy that brand, no other. and i HATE it when the restaurant brings me tabasco sauce when i ask for hot sauce... it has NO flavor!

I don't like spicy food. However, whenever I do eat the occasional Chicken Quesadilla (sp?) from Taco Bell, I put some fire sauce on (the others taste sweet). But, I rarely eat Taco Bell.
Otherwise, when I order a salad with chicken, lettuce, black beans, tomatoes and corn (absolutely nothing else!), I put some Tabasco on top. It compliments the flavors really well. But I rarely eat that too.
So, overall, my two answers would probably be: Taco Bell's fire sauce (in the packets) and Tabasco (the original kind).

El Yuacateco. When I moved to Oklahoma 15 yr. ago my mom would send me a dozen bottles every year for Christmas. The XXXtra hot was great but the regular red is darned good. The green is mainly for eggs.
Like Lilia, I like Sambal Oelek, that's Indonesian for "ground chili paste", because originally they actually grind fresh chili peppers on stone by hand and mix in other ingredients as Lilia mentioned.
It's hot and not diluted by vinegar as Tabasco and "Hot Sauce", Indonesians mostly use lime instead of vinegar.

I keep one of the shelves in my refrigerator door for hot sauces only. You need different ones for different things. I use Yucateco for a lot of things.
The ONE I can't do without is Sri Racha, a spicy and garlicky Vietnamese sauce.
It used to be tabasco and i met a colleague who introduced me to the chipotle sauce from bufalo. Oh that on your meat is just divine and it has a warm heat. It consists of water, vinegar and smoked chili peppers. The other is green chillies on your eggs. Mmmmmm ......delicious! I use sambal brandal for grilled cheese. You must try it, hot and sweet, just lovely.
