Hi There, the Japanese have many varieties of broths.. The most popular two in the west happen to be Miso- which is light yellow and has a kind of powder that sinks as it sits, and is usually accompanied with chunks of tofu in it and seaweed in it. The other, is called "Dashi" and it is completely clear, dark liquor, that is made from simmering shaved dry bonito and kelp together in water. If there is a Japanese grocer near you, they have both of these in "instant" format where you simply add water.

Look for it in Japanese markets. There is the instant that is available or you can make your own. Virtually any vegetable can be used mushrooms, snow peas, napa cabbage, etc. In Japan they use tiny clams. Once you get the hang of it you can make your own recipe. It's also addicting so be careful.

miso soup

Miso soup (味噌汁, miso shiru in Japanese) is a traditional Japanese soup consisting of a stock called "dashi" into which is mixed softened miso paste. Although the suspension of miso paste into dashi is the only characteristic that actually defines miso soup, many other ingredients are added depending on regional and seasonal recipes as well as personal preference.

Ingredients

* 2 scallions
* ? pound tofu
* 1? cups dashi (Japanese fish stock) or 1 chicken bouillon cube, dissolved in 1 cup boiling water
* 2 Tablespoons red miso

Procedure

1. Wash the scallions and cut the green parts into 1?-inch lengths.
2. Cut the tofu into small cubes and place the scallions and tofu in soup bowls.
3. Boil the dashi (broth) in a saucepan.
4. Put a little of the boiling liquid in a bowl and mix with the miso.
5. Pour back into the saucepan, then ladle into the soup bowls.
6. Serve immediately.

Makes one serving.

It's called Miso soup and there is a special way to make it. You can buy a version of it in the grocery store.
