James Beard (Portland, Oregon) had much to do with food from south-western Canada.

Canada is such a big place, that each region tends to have it's own specialities - just like food from New Orleans isn't typical of all the U.S..

Quebec has it tourtieres (meat pies), and poutine mentioned above.

Pacific Canada has various salmon dishes, and Atlantic Canada has lobster specialities, and chowders. Alberta has great beef.

Well as a former chef from Canada and still iving here, common is not much different than the U.S or U.K, culturaly speaking we have the same melting pot as both those countrys.

From Asian, to African, Eurpoeans, Carribean Islands, India, the Medditerian countrys and most anwhere else.

I live in Toronto and I can get Korean, Ukrainian, Greek, Somolian, Tibetian, Croatian you name it regional and national based dishes.

As for Poutine, Back Bacon, Beaver Tails, Tim Hortons, in the Prairies Robin's and Salsbury House, in B.C, White Spot, all are regional specialtys and unique in certain places.

So depending on were you are here there are subtle diferences, but most are known all acrossed the country
